    My mother's neighbor used to make this for special events. It is incredibly tasty and very easy. It looks pretty sprinkled with a little powdered sugar! This needs to sit overnight and cook time does not reflect this.

    Except for the the milk and small amount in the egg, the cake itself has very little fat and using low-fat milk will keep the fat to a minimum, I have stated the egg as optional, I strongly suggest to add it in for a more cake-like texture -- If you are looking for a fancy cake to serve then this is not it however for the ease of this cake it is darn good and makes a great weekend brunch cake, it's like a combination of a cake and cinnamon bun all in one, ridiculously simple to make as it's all mixed by hand and takes like 5 minutes to throw together, try adding in some chopped strawberries, apples or blueberries, raisins or dried cranberries, this recipe is a blank canvas, so go ahead and add in fruit, nuts chocolate chips whatever you wish, and to kick this up a notch drizzle recipe#120835 on top :) --- servings are only estimated

    Created for RSC #9. THE SERVING SIZE HAS BEEN CORRECTED! It originally stated 8-10 servings and should be 2-4 and the reviewers were certainly right! The ingredients should yield you about 8 pancakes based on their small size. Crispy potato pancakes topped with caramelized onions, smoked salmon and dill sour cream. I would serve two of these as a first course per person, or serve 4 as a light lunch.

    I was recently sent a very sweet "We miss you" card from friends that I appreciated very much. The well-wishings were on a card with a lovely country fireside photo of Shumway Mansion’s "Yummy Eggs" and included the quote: "Love and eggs are best when fresh." (A Russian proverb.) :) "One of the Northwest’s most outstanding ‘inner city’ bed and breakfasts is the award winning Shumway Mansion. Entirely furnished in period antiques, the 23 room home was built in 1909, winning the 1986 award from the Washington Trust for Historic Preservation. Overlooking Juanita Bay and only minutes from nature trails and jogging paths, the Shumway’s breakfasts are as legendary as the special dinners and wedding receptions set in the beautiful rose garden." Included on the back of the card was this recipe. Editor's Note: We received an update on the Shumway Mansion. "My family closed the Shumway Mansion Bed and Breakfast Inn and Wedding Reception Center a couple of years ago and we are now converting Shumway Mansion into an Adult Family Home in Kirkland, Washington. Our new website is shumwaymansion.net We're looking forward to using many of my old B&B recipes for our new residents.
