    A little something I put together to get my DM to eat a decent breakfast, she refused to eat cereal out of a bowl or eat fruit but put the lot in a blender (or use stab blender) with milk and it was gobble, gobble, gobble. I mainly use tinned fruit - peaches, fruit salad, pears, apricots, mango or fresh banana or equivelent of canned for fresh.

This is a great recipe to teach the kids to make so they can make breakfast on their own. *I wanted to add that veggie spray works well and I most often use 1 whole egg and 1 egg white mixed together for a healthier approach- you can't tell the difference!

    I have the worst luck with Hollandaise Sauce. Clumpy because I over cook it and the butter seperates or fear of under cooked egg yokes. I found this recipe and gave it a try. It is delicious! Tastes just like real sauce and so easy to make! Just make sure you do not cook for more than 1 minute total!

    Rudy loves these eggs basted hard. They are a cross between poached and fried. You can cook them to your preference; I like basted soft myself, served with toast. You need a fry pan with a lid, glass is best, so you can watch for doneness.

    I came up with this recipe after attempting to make some sweet potato pancakes from cooking light. After looking at all the ingredients I realized there was a much easier way (they wanted you to make the batter from scratch). I chickend out at the last minute with the sweet potatoes though. The pancakes came out so good. You can't even tell it is low cal/fat. If your brave enough you can add a 16ounce can of sweet potato/yams after it is all sturred together. I'm sure they will be good. I just haven't tried it yet.

    ZESTY! This is from MrBreakfast.com. Although very tart, this has a sweet depth to it with a nutty overtone. I use more nutmeg, and find the salt, although optional, should be used. I will try subbing milk for water, that may also be good.

    Potatoes are nearly religious in Iceland. If I put the most extravagant “potato-less” meal ever created in front of Siggi … he scans it, frowns & says “Hmm. No potatoes, huh?” In addition, SusieQusie accuses me (rightly so) of sleeping comfortably while Siggi trots off to work … so I thot I'd "marry" these 2 concepts & devised his now favourite G-N-G (Grab, Nuke & Go) breakfast.     This quick and easy microwave hollandaise sauce is absolutely wonderful served drizzled over Eggs Benedict Casserole recipe #121583 (I suggest making double the amount of sauce for the Eggs Benedict Casserole, as it's so yummy!), over asparagus spears or your favorite vegetables, or with seafood etc. Delicious! A delightfully easy microwave recipe that I am so happy to have discovered--from the newspaper.

    It is so much cheaper to make this than to buy those little packets of oatmeal. You can make this to your own taste and try it different ways every morning. My kids love this and even my little one eats it (with her hands, yuck!). Serving amounts is a guess.

    I have been poaching eggs in the microwave for many years. For me this is the best way to prepare poached eggs for 2. It is quick, easy and almost foolproof. Please make sure you use a toothpick to pierce the yolk before cooking or it will explode!

    Growing up, it seemed my parents would be quite creative when preparing weekend breakfast. We always had plenty on the table, even when we had to scrimp to make ends meet. When we did not have a loaf of bread, my mom would use leftover hamburger or hot dog rolls, or whatever she was able to find which would toast under the broiler. Along with our favorite weekend broiled cinnamon toast, we often would have this along with our bacon, eggs and grits. Broiled Cheese toast is a favorite childhood memory for me. I hope your family will enjoy it too!
