    Popular street food in Hong Kong. These are crispy on the outside and fluffy on the inside. Gai Daan Jai (Tsai) means Little Chicken Eggs. Other names include Puffe, Bubble Waffle, Eggettes, Egg Puffs and I am sure there are other names. Served for breakfast or an afternoon snack. Either served flat or rolled with fruit in the center.     This fast and easy pizza dough is perfect for when you don't have time to wait for dough to prove or to play around with yeast. This recipe came from Kid Spot Kitchen. Notes: This quantity is suitable for one pizza. This makes a great base that you can use for so many other things such as cheese and bacon scrolls and garlic bread. If the dough seems a little wet when you mix it, just add a sprinkling more flour. The more you knead it the better it comes together. I thought in the beginning that there was no way this will work but as I kneaded it, the dough became pliable and stretchy.

    I found this recipe on texascooking.com. I altered it a bit to use half whole wheat, and found the dough too dry, so upped the oil content. I also use a press instead of rolling them out--far easier. These are soft, chewy, and delicious. Perfect for gorditas or fajitas, though we usually just eat them out of hand. I cook mine on my griddle, since it tolerates being heated for a long period with no oil on it. If you like large tortillas, you can divide the dough to fewer balls.
