This recipe has been in my family for several generations. In Louisiana, we serve this with boiled cabbage, turnip greens, black-eyed peas, and butterbeans. It is delicious, but takes practice to make it just right.
This is an incredibly moist and tender Banana Nut Bread. The addition of the instant banana pudding gives it an extra banana "kick". I find baking it at a lower temperature avoids burning the edges. My DH likes it for breakfast served under two eggs over easy.

I like this cornbread because of its great taste. Moist and so easy to mix up. Also is good hot, warm and cold. I like to add diced red jalapeno or some chipotle seasoning for color. This recipe always turns out good.
I found this online when I was searching for a copycat for Hardee's Cinnamon Raisin Biscuits. I also add a glaze of powdered sugar, butter, and milk to the top of them after they are finished baking to make it more like the kind from Hardees. I didn't post the recipe for it because I don't have exact measurements, I just wing it! My hubby and I enjoy them and I hope you do too!
