This has been a busy spring with a school auction, confirmation and 2 graduations all within 30 days. I requested bite-size desserts in a post and received many wonderful suggestions. Here are the recipes suggested by the wonderful cooks here at Zaar. Thanks to all of you!!!

Allow an extra 30 minutes to chill the dough. From Real Simple (May 2005)

    Recipe #119032

These melt in your mouth cookies are perfect for party trays. They are like miniature pineapple pies.

    Recipe #317610

I have not tried this recipe. I got it from Copy Kat Chat.

    Recipe #253440

This is a recipe that seems to be highly sought after in the Phillippines. It has the texture of a muffin and the flavor of an angel-food cake. While enjoyable plain, is very good with buttercream frosting as well.

A delicious shortbread topped with jam and coconut! From an old Country Womans Association cookbook in Australia. In imperial measures as this was well before metric arrived!

This recipe is fast and easy to prepare. The spicy gingersnap really compliments the tartness of the lime.

    Recipe #248911

This is a really good chewy, nutty bar with a bit of chocolate drizzled on top. I like it cut in very small squares on a tray of sweets.

    Recipe #150643

These are my variation of Dutch Letters. It's recommended that you use pure almond paste that contains only almond & sugar rather than almond filling that contains corn syrup or sucrose.

    Recipe #121448

These are good on your holiday cookie plates.

    Recipe #12106

My most favorite cookies in the world!!! Very expensive to buy in an Italian bakery and this recipe is the best I've ever tasted. I love baking Italian cookies of all kinds, but these are my specialty. When breaking up almond paste it's always nice to have someone sit and do it with you. I usually use that time to chat with my kids. My sister did it with me once too.

Madeira is fortified white wine. Red petit four cups make a nice presentation for Christmas or Valentine’s Day. If you do not have paper petit four cups, you can put dipped truffles on waxed paper and refrigerate until chocolate hardens. Cooking time does not include refrigeration time. Note: This recipe uses pasteurized egg white product to avoid raw egg issues. I used “All Whites” 100% pasteurized egg whites. It is found in the dairy case at the market. Some egg white products have flavoring. Check the list of ingredients; there should be only one ingredient: 100% liquid egg whites.

This has been a favorite ever since I was little. Also it is one treat that all of my children enjoy!

CHOCOLATE, Truffles, CHOCOLATE, almonds!!! Need I say more! Few ingredients and fairly simple to make. Cook time is chill time and it is estimated. Hope you enjoy!

These are great little cookies for any holiday!! For Christmas I use red and green sugar (one side red and one green), for Easter I use pastels. For just everyday, I use regular sugar.

This recipe is VERY rich, but very delicious
