After many years of experimentation, I think these are the best biscotti I've ever made. They are nice and dry and crunchy the way real biscotti should be - they are not cookie-like like many you buy in the store these days. They are perfect for dipping, they have a long shelf-life, they are delicious and flavorful. My toddler LOVES them and even asks for them before bed with a cup of milk for dipping. I love biscotti of all sorts, and this recipe, packed with walnuts in a double chocolate dough, is just delicious. Adopted from Mean Chef in September 2006, I have left the original directions intact, but added my comments and notations in parentheses. As presented, this yields about 30 six inch long cookies. If you want smaller biscotti, divide the dough into 3 logs, and reduce your baking time accordingly.

Double the size and killer chocolate taste, these rich twice-baked cocoa cookies are just as yummy with a glass of cold milk as with a cup of joe.
There's nothing better than a hot cup of joe and a crispy biscotti. Unless, of course, you're enjoying them at a cafe in Italy! :) I was always intimidated to make these, but found them to be a sinch to make and can't wait to try them again.
