    A very decant mashed potato that is not for the diet conscious. Recommend using Klondik gold potatoes which are a small buttery flavored potato that requires no peeling. Zaar would not take Klondik gold potatoes. Can use yukon gold but will need to cut them up as they are larger than the Klondik's.

    Although I know my American friends do not favour "the extra bits" of an animal, you haven't eaten a deeply satisfying meat stew until you've tasted oxtail! It's such a flavourful meat that it needs little in the way of seasonings. Oxtail comes neatly cut up and packaged, it's clean, and it's oh, so simple to cook. I made it over the weekend, and to us, it's a special treat -- being popular, it's an expensive meat cut.

    This is sooo easy to make, and everyone thinks you spent a lot of time making it. The cooking technique is what really makes this recipe work so well. You'll probably end up using this technique a lot; I sure do. (I made Kittencal's Easy and Delicious Ranch-Parmesan Chicken this way and it was amazing.) OK, back to the recipe; I use only 1/2 as much butter as the original recipe called for but I am posting it exactly as I received it. I think 2 tablespoons butter is plenty but you judge for yourself. So, keep in mind that you can cut the fat considerably by reducing the butter. I also use regular 1 or 2% milk instead of half and half when that's all I have around. It always comes out delicious. You can use this recipe for pork chops, too.

    People are often surprised to learn that Peruvian cuisine has a strong Chinese influence. A large Chinese immigrant community in Lima has given rise to a unique fusion of Incan, European and Asian cuisine called chifa cooking. Lomo saltado, a stir fry of beef and French fries over rice, is the ultimate example. I did not include the rice or French fry cooking time. Enjoy!
