Leftover beef roast? Not anymore, here is a quick and easy way to use up that roast.

    Recipe #28799

Crock pot recipe. Beware - this is spicy, but is an excellent shredded beef for tacos, sandwiches or enchiladas!

    Recipe #59224

This is a great summer meal and quick and easy to put together and tastes wonderful. Refreshing served with the cucumber sauce and is even low in fat. I think this came from Quick Cooking. It's a favorite in our house.

    Recipe #30081

    A crowd pleaser for sure

    Recipe #58443

Adapted from Wonderful Ways to Prepare Chinese Dishes.

Have not tried this yet - posting so I can find the recipe the next time I want to make pot roast. It sounds wonderful!

    Recipe #103437

Good with whipped potatoes and a green vegetable or salad. Serve with more merlot. When I've lacked an oven-proof skillet, I've made in a small enameled roasting pan.

These little Spanish snacks (tapas) probably originated in the Middle East and were carried by the Moors into Spain. Travelers and traders could carry these snacks easily, and versions can be seen throughout the Latin world under various names. These delicious little minced meat pies are popular in Mexico and northern New Mexico at Christmas time. (See my recipe for Empanada Dough.)

    Recipe #92159

Thought this sounded nutritious, easy and autumnal.

    Recipe #102708

Got this one from a Betty Crocker cookbook. Changed it up just slightly for my family's taste. Very hearty and good when it is bitter cold outside.

    Recipe #79349

This recipe came about because of a foodtv "30 Minute Meals" episode that featured a chicken pot pie made along these lines. I just took the recipe and changed it to meet our taste. Very tasty.....great comfort food.

    Recipe #81636

Delicious fried burrito like Mexican meal. Serve with spanish rice and refried beans for a complete meal.

They serve this at a little cantina near where I live. Doesn't look so good, but the taste is fabulous.

Borscht is like chili; there's no one recipe for it. This recipe is somewhat unusual because it does not have cabbage; the addition of lime juice and sugar may also not be traditional. My mother did get it from a Russian coworker. It is the borscht I grew up with and I love it.

I combined parts of several different recipes and came up with this soup that I've been making for years. As much as I hate cold weather, I'm always kind of happy to see it arrive just so I can fix this soup for dinner. I usually serve it with crusty sourdough rolls for a wonderfully satisfying comfort meal.

This classic beef bourguignon is wonderful. We especially enjoy it on a fall or winter day. I typically reduce a significant portion of the cooking time by using the pressure cooker. Each pressure cooker is different, so you would need to refer to your pressure cooker instructions to adjust cooking time.

    Recipe #42185

I got this recipe from my mom. I'm not sure where she got it, but growing up in Miami, I didn't really question it. Its very hearty and filling and the flavor is just so unique! I really like it (hot or cold the next day lol!) (cooking time includes cooking beef if needed and the simmering time)
