very tender, very juicy. makes lots of gravy great over mashed potatoes simple to make. melts in your mouth everyone who's tried this recipe agrees you won't find an easier or better tasting beef roast recipe anywhere.
This is the most awesomely delicious beef dish I've ever tried! Truly easy and honestly loved by every member of my family...In fact my 19 year old daughter, Jamie, asks for it specifically every time she visits, and I even won over the in-laws with this one! Can you say GARLIC?? Don't fear, when you pan roast the garlic in olive oil you get this wonderfully sweet mellow flavor... then you have this bonus of roasted garlic olive oil to use later! I got this idea from Michael Chiarello on the food network but have made it my own.

This is true southern cuisine, the flavors in this recipe are a little more complex than the basic chicken fried steak. Not being a real Texan I don't like mine with gravy, but it would be blasphemy not to post the gravy recipe as well. This recipe also works well for venison (first soak meat in milk to remove the gamey taste). Makes excellent sandwiches the next day (serve leftovers on texas toast). Storing this recipe on Zaar cause I couldn't find it last time I had a craving!
Washington State University sells Cougar Cheese. The Viking Cheese is "a mild-flavored, semisoft cheese comparable to Monterey Jack," aged for at least four months. My wife and I are in a re-creation society and study Norse culture, and find the idea of a meatloaf stuffed with Vikings amusing.
