    This tropical dish can be broiled as well. Be sure to soak the skewers in water before threading the meat and pineapple on. I'll even soak them in the marinade.

    I got this recipe from the newspaper years ago, and make it frequently. I serve it with my cucumber yogurt sauce, which I'm also posting. Be warned- It is very garlicky. Also, use less pepper if you're using all beef instead of lamb.

    My very "EASY" favorite dinner. A 30 minute-meal that tastes better the 2nd day so leftovers are met with a cheer, not a groan! Bet you already have all the ingredients in your pantry. This is so good even DH, who doesn't like peanuts, loves it, and my finicky 10 year old, too. It presents nicely on a bed of rice topped with fresh chives, and serve with Asparagus Bundles #111515 for a nice contrast of flavor. Says serves 6, but serves my family of 4.     This is a nice light red meat recipe. It is very low fat, I would recommend using lean cuts of beef in smallish serving sizes. It is incredibly quick once you have marinaded the steak, and the cucumber salsa can be prepared up to a day before. This makes quite a bit of salsa, we eat it on the side as well. Marinade time is not included in the time to make. As you can see in the picture, Bethany has elected to make this more family friendly by using flank steak. This is a nice variation on my more steak style version which would be easier if you were serving only a few people.
