This is a nice light red meat recipe. It is very low fat, I would recommend using lean cuts of beef in smallish serving sizes. It is incredibly quick once you have marinaded the steak, and the cucumber salsa can be prepared up to a day before. This makes quite a bit of salsa, we eat it on the side as well. Marinade time is not included in the time to make.
As you can see in the picture, Bethany has elected to make this more family friendly by using flank steak. This is a nice variation on my more steak style version which would be easier if you were serving only a few people.
I loved it when Mom used to make this for us! I have no idea if she originally made it for Dad, who had been in the army, or if she just liked it because it tasted good and was a budget stretcher. A traditional favorite, good ol' SOS. Note: the title of this recipe specifies that it is made ground beef, rather than chipped beef; "authentic" SOS is generally made with chipped beef, however many folks also refer to the ground beef version by the same name.
I make this for the "boys" every year during the deer hunt. They talk about it the rest of the year! I like the rich creamy flavor too! This is a little work, but it could easily become a holiday tradition!

Haven't gotten to make this yet but I saw Paula Deen's show today and my mouth was just watering. YUM! Paula's show was on "Elvis's favorite foods with a twist". This meatloaf was one of the recipes and I thought I would share it with everyone.
I have made this for years and everyone loves it. I add more tomato sauce then called for and spices depending how spicy you like it. I also double the recipe so we can eat it more than one day. I also use 3-15 oz cans of tomato sauce based on me doubling this recipe and because we like it juicy.
If you would like you can top with shredded cheddar cheese..
I make this with grilled cheese and pb&j spriral's for a complete meal.
If you want to up the heat, add a can of chili's and put more chili powder
(Filet Mignon in Puff Pastry) I prefer not to eat out on Valentine's Day, hate fighting the crowds, the noise, the usually bad service because the restaurant is jam packed, the expense...could I have a little cheese with my "whine"?
