    I found this recipe in one of my favorite cookbooks: "The Vegetarian Meat and Potatoes Cookbook" Besides being a great dairy free recipe for "mac and cheese", the flavor of the dish from the miso, tofu and lemon is really unique. It's also a fun way to sneak tofu into the diets of non vegetarians. I do eat dairy, so I usually use skim milk and real cheese instead of the soy, but the original recipe from the book uses the non-dairy options.

    This dish is a great time saver, since it can be prepared totally in advance and reheated just before the meal. It's also great because you can play around with the seasonings to suit your family's taste ie: more garlic, or onion, or both! I also think the flavor of these potatoes tastes great using the low fat versions of cream cheese and sour cream. However, when I make these for holiday meals such as Thanksgiving or Christmas, I sometimes use regular sour cream and cream cheese. If I'm using chives for garnish, I like to mix in about 1/4 cup right into the cream cheese/sour cream mixture as I heat it.

    Quick and simple way to add some extra flavor to plain old white rice. This was something I threw together to go with some fajitas I had made. I usually make this rice in my rice cooker, but it works on the stove top as well. I've used regular long grain rice, or parboiled, both work fine.

    This recipe comes from my best friend, Lisa's mother. Miss Jean has served this potato salad recipe at EVERY summer gathering that I attended at their home for as long as I can remember. The flavors are so basic and simple, which is why I think I enjoy it so much. Very easy to prepare as well. Please be sure to use Miracle Whip and NOT mayonnaise, the flavor just won't be the same.

    This is a wonderful fruity, yet spicy salsa that's a great accompaniment for grilled seafood, (I especially enjoy it with grilled tuna, swordfish or shrimp). It's great with pita chips too. This dressing was served by one of the farms that comes to local Farmer's Market on Saturday mornings. It was published this week in our local paper. Our city has given plots of land for two local inner city farms to grow organic vegetable and herbs. The gardens are tended by the people and children of the community, and have been a great success. This yummy dressing goes wonderfully with the fresh greens that I'm able to get there in the summer

    This is a terrific, simple and quick side dish. I've also used this recipe to spice up a box the "Near East" brand flavored couscous as well. Simply use the amount of water specified on the box, and add the extra ingredients. It will still be ready in 5 minutes
