I made this very easy, healthy recipe today for lunch from Bon Appetit. This was my first time making quinoa. I will definitely be looking for more recipes. Not only was it tasty, but I loved reading up on all the health benefits. I halved the recipe easily to serve just me (for the next few days) and the only substitution I made was to use grape tomatoes as I could not find baby heirlooms.
This is my adaptation of a Cooking Light recipe that follows my approach to healthy eating to a "T". Meat is too delicious for me to become a vegetarian but I am trying to eat way more vegetables than meat. This recipe delivers on that and tastes fantastic. I bet you'll never miss the additional meat!
Note: when I made it I doubled the recipe (makes great leftovers) and used 1 can of vegetarian baked beans (for a nice sweetness, this was the can I mashed) and 1 can of kidney beans, which I left whole.
I love making my own burger buns with my bread machine and this recipe is so easy and the results taste terrific: "Recipe #169916".
This is an adaptation of a Weight Watchers recipe that we have enjoyed many times. You can vary the toppings to suit your family's tastes. We have tried black olives, mushrooms, sausage, and different kinds of cheeses.
Note on 5/19/2012 Since I always spice it up and the reviews agreed, I changed the recipe to reflect this. As always Pizzas are very easily customized and you can make it the way you like it.
This is a wonderful lemon-flavored pesto. This was my first taste of pesto and I've never gone back!

I'm glad that you all like this. I freeze this now and keep it on hand for my spaghetti sauce or others sauces. It freezes great!
This recipe is made with yogurt instead of milk or cream. With Tomatoes & basil in season this recipe makes a perfect summertime meal. Best served at room temperature, so it is great to bring along on a picnic. Recipe comes from Stonyfield Farm.
