If you love lemon the way our family does you will love these lemon squares! Just the slightest hint of coconut in the bottom layers gives it just the right touch. Lemony delicious layer completes the top! Hmmmmm! So delicious you won't be able to stop at just one!
This is a delicious lower fat bar if using reduced-fat peanut butter, these are perfect for kid's lunch boxes, feel free to add in some chopped nuts or sunflower seeds or coconut in place of the raisins,
Tangy citrus frosting for rich bars (fingers), perfect for the holidays or other special occasions. There are three parts to the recipe, but it's very easy to put together and the results are delicious.
These are great to take to work, kids lunch boxes, for a potluck or a bake sale, you can slice them and stick them in the freezer then wrap tightly in foil, put a frozen wrapped bar into your kid's lunchboxes, they will thaw out by noon, they are just as good if not better than the store-bought! ---This also works well using blueberry or other flavors of jams, for easy spreading heat the jam in the microwave until softened :)
These defy description - are they a bar cookie? Or are they candy? Either way they are delicious, very very easy to make. I always make these at holiday time and I also make a big three batch amount to donate to my church's "cookie walk" at our holiday fair. Of course everyone LOVES them. I got this recipe years ago - one of my first years of teaching from a regular substitute teacher who brought them in to share.
This is a delicious, easy-to-make cinnamon cake that is wonderful for dessert or just as a snack cake! I usually just dust it with powdered sugar instead of using a frosting, but cream cheese frosting would go nicely with it.
