Hooray for fall! We love this pumpkin bread recipe--especially when the slices are slathered with a generous spread of cream cheese. Makes two loaves, so freeze the other one, or heck--eat it. This bread goes fast.
I got this recipe from a Weight Watcher's meeting, and found these very tasty. This recipe is low in fat and calories. I also tried 1 box of cake mix with a cherry lite pie topping - very tasty. My kids loved both muffins. (for Weight Watchers: each muffin is only 2 points.)
When baking your favorite muffins a sprinkling of one of these simple to make toppings makes for a nice touch. Well worth the few extra minutes it takes to prepare. If you only sprinkle half it will appear that you have made up two kinds of muffins...adding variety to your serving tray.

Fire King cups are just heavy coffe mugs like the ones that come with sayings like "I love Mom". Just use good judgment and don't put delicate china that would crack with oven heat. The coffee/soup mugs from the dollar store will do fine. Note that if using very large mugs you will need to double the recipe in order to fill 9 cups.
This recipe came from a Stonyfield Farm Yogurt cookbook. The yogurt makes 'em moist, the ham and cheese makes 'em awesome. I've made these twice in the last week, my husband likes them so much. Prep time does not include time needed to cook ham if you use the country ham such as I did.
