    This cookbook is mostly salmon. All recipes swimming here are tried and true. Either my own or ones i have tried and liked.

    This comes from a Costco Cod package from Copper River Seafoods in Alaska. We like to bake our fish, so this is one of our favorites. Most ingredients are on hand like; mayonnaise, Dijon, lemon juice, parmesan, etc. and so low in fat!

    This is from the America's Test Kitchen Cookbook, 2006 edition. This kind of made me think of chicken piccata, only made with fish. Use a flatfish, like sole or flounder for best results.

    White fish fillets cooked with stock on a bed of chopped vegetables. From the Prudhomme Family Cookbook. Although Paul Prudhomme insists that only fresh fish be used in this recipe, I have had good results using frozen fish. Any white fish can be used. If you don't have seafood stock, substitute chicken or vegetable stock. Serve this over cooked rice.

    Oh my.... this relish is good on any type of fish, we tried it on DH's trout... yummmm. Recipe calls for fresh corn, but frozen is okay too. If using fresh corn, you'll need 2 ears, cooked and removed from ears. Given to me by DS's sweetheart.

    Dijon, orange juice and scallions, most of which are in your fridge. Easy, low in carbs and so delish. I found this on the eating well website. Hope you enjoy. Original recipe called for 2 T. dijon, we have chosen to cut back to 1 tablespoon and love it that way. Sometimes we broil in the oven and to keep the steaks moist, I add some of the leftover marinade about half way through broiling.

    I found this in the "South Beach Diet Book".. even if you're not dieting... it's great. Just substitute real sour cream for the fat-free for a to die for experience. It's quick, simple and uses on hand ingredients.
