I recently had a version of this soup at a lunch restaurant. I usually am not a huge fan of canned asparagus, but in those months when fresh asparagus is either unavailable fresh or just too costly, this might come in handy. You may also prefer to use leftover cooked asparagus instead, if you happen to have some. Adapted from a version found on Worldwide Gourmet.
After learning how good asparagus is for the body and how well it helps the kidneys. I thought this recipe was an excellent one. It is not cooked so the the asparagus is full of Vitamin A, Folic Acid. Did you know that asparagus has the largest percentage of RDA of folic acid then any other food source!! So eat up. This is excellent served as a dip or a spread. This recipe came from one of my favorite magazines: Organic Gardening
I found this in a pasta ad in the Sunday paper. I haven't tried it myself. I am looking forward to it. Please post your comments (good & bad). If you like it... Great! If not, hopefully you'll like the next one I post :-)
This baked asparagus side dish is so easy to make, yet it provides a variation to the usual vegetables. Try different varieties of olive oil, such as roasted garlic, or basil olive oil. I have also added garlic (fresh, minced in jar or garlic powder). I often use this method to cook broccoli florets with delicious results.
