This is not your average rice pudding. There's a fragrant, almost floral, waft of scent and flavor that is imparted to the creamy rice mixture by the ginger, lime and honey. The toasted coconut and rum are the kickers, though, making it over-the-top good!
Hot weather is upon us and I don't like to spend too much time in the kitchen heating it up. I like to eat simpler and fresher, so tasty, main-course salads are the ticket! This salad makes me feel so good eating it, bringing balance to my appetite and my health, hence the name.
The 'twist' being the addition of lime juice which adds a really fresh taste to an unbeatable ice cream combination. Use your favorite liquid honey, but Orange Blossom was really good in the version I made. This ice cream is very easy as you don't have to make a cooked custard as is traditional - and it's egg-free!
I wanted to make something that would tantalize our taste-buds but still be healthy, fresh-tasting and colorful. This recipe delivers in every department. The kids loved assembling their own oriental-style chicken-lettuce 'tacos' at the table, loading them with the toppings of their choosing, drizzling with the yummy sauce, sprinkling on nuts and then eating everything up! I guess I should have made twice as much.
Have you seen the ingredients list on the back of commercially-produced BBQ sauce? High-fructose corn syrup seems to be in each and every one, and many of the other ingredients would need a chemical engineer to figure out. Solution? Make your own!!! We loved this homemade sauce slathered on chicken parts and ribs that we baked in the oven. Generously brush on the sauce for the last few minutes of baking to get it caramelized and serve more at table-side.
I am trying to reduce the amount of red meat my family eats so this spicy/sweet chili recipe is heavier on the beans. Also, I use no fat other than what the meat renders. Yes, the ingredients list is long, but it’s mostly seasonings and it makes for a chili that’s BIG on flavor. And you’ll just have to trust me on the addition of the cinnamon and cloves – they’ll be your ‘secret’ ingredients from now on. ;-)
A home-baked goody that is scrumptious served with a fresh pot of tea or coffee for a leisurely weekend breakfast. Come to think of it, these scones are so quick and easy to put together that they could be part of a 'special' breakfast any day of the week. You decide.
It’s summer and it’s hot. What I want…what I crave…is to eat something delicious, refreshing and healthy, and that’s how this brown rice tabbouleh was born. It’s the perfect salad to have with grilled anything, or to bring to a potluck. And you know you’re being good to yourself in every way possible.
A long and fancy name for what is, in essence, a simple and very elegant dessert - and just in time to make an impression on Mother's Day. The three different parts to this recipe are really effortless and produce a lovely result. (Please note that the calorie count for this recipe is exaggerated as it takes into account the full amount of brittle, when you only use 4 pieces for the decoration, and can eat the rest as candy)
Wondering what to make for Mother's Day that's comforting, delicious, and good to eat at any time of day? This version of the classic Biscuits and Gravy is kicked up a notch with the addition of portabella mushrooms and swiss cheese.
These baked drumsticks are finger-licking, lip-smacking GOOD! Make up the hoisin glaze and gift to your friends in small, attractive jars. Add the instructions on how to bake the chicken, and you'll have some very happy people on your hands! Serve with basmati or jasmine rice drizzled with the pan juices from the chicken and finely-sliced green onion tops.
These Italian biscuits are hard and crunchy because they are twice-cooked (‘bis’ is Italian for twice and ‘cotti’ for cooked). This makes them ideal for dipping into dessert wine, coffee or tea. Gifting these delicious cookies by placing them in a pretty, seasonal tin will make them the most well-received treat of the holidays!
This salad, incorporating healthful beans, brown rice and crunchy veggies, is so pretty and tasty. I have called for pre-cooked brown rice and not taken it into account in the cooking time of this recipe.
