Soba noodles are easily found in the Asian section of your grocery store, you could substitute 1 pound of angel hair pasta for the soba noodles but the soba noodles are better to use ;-) Plan ahead this needs to chill for a minimum of 2 or more hours before serving, prep time includes chilling time. Add in some frozen thawed peas, steamed broccoli, or some cooked chicken or shrimp if desired.

I made this recipe in a Thai noodle cooking class. It tasted so good and fresh, and was very easy. Great for a summer evening when you want something that's filling and delicious, but not served hot.

Yet another, but this one differs from the others already posted, and it tastes great!. Very flexible, because you choose how you want to garnish: can be a side dish or a main dish. The dressing does contain lots of ingredients, but they are pretty common items and it is a good way to use lots of those things you might have purchased for asian recipes that are cluttering up the back of your refrigerator! Prep time DOES NOT include 30 minute chill time, so plan ahead.

You can use a variety of vegetables in this salad, chosing those that marry well with the Oriental style dressing. It's a great side dish for your favorite grilled meat. Or add some grilled shrimp or chicken for a main dish salad. I like to use Japanese Soba noodles or rice noodles in place of the spaghetti for a change.

This salad is a great side dish for grilled Teriyaki chicken, pork or beef. Last night, we ran out of gas for our grill, so I made Crispy Panko Pork Chops #87166 by Marie (very good!!), using the pork tenderloin I planned to grill, cut into 1/2" medallions. I have to say we almost liked the salad better with this than the Teriyaki. I digress, sorry - this salad has many unique flavors and textures to please everyone's palate. Enjoy!!

This is just a simple udon salad recipe. For non-vegetarian simply add about 250 grms smoked salmon cut into small strips

My sister got this from a woman in her office. Sounds delicious for summer!

    Recipe #63169

This comes from a cookbook I was given some years ago called Stone Soup. It's full of Easy Japanese Home Cooking and was compiled by university students as an English project.

Oh, this is so good! A great "different tasting" picnic salad. Sweet and tangy, with a little crunch.

This is a tangy refreshing salad that goes well with a shrimp dish or any oriental menu. It goes great with Tempura.

    Recipe #9194

This is the most absolutely wonderful salad! It's perfect to serve at any dinner party. If you want more heat then increase the cayenne pepper. The green beans can be substituted with fresh snow peas. Plan ahead the noodles have to be chilled for 2 hours. If you want to make this into a main dish throw in some cooked chicken or shrimp. Prep time includes chilling time.

Although I haven't tried this yet I thought it sounded delicious with Asian grilled pork or chicken or mixed with leftover chicken or shrimp. Recipe source: Gourmet (June 2005)

Pearl is the aunt of a friend, and this is auntie's recipe. I really liked it and thought others here would too! I liked it at room temperature, but you could serve it chilled.

    Recipe #20080

This is a delicious salad served only in the summertime in Japan. I really miss being able to drop by the convenience store and pick up one of these for a fast and easy meal. It's wonderfully refreshing, especially when there's no air conditioning available. Cook time refers to boiling noodles.

Delicious cold dish for a hot day.

    Recipe #97968

I ate this interesting salad at a friendly get-together. Years later, I came across a similar salad recipe in a cook book that was made by my nephew's elementary school in New Jersey. I made it for a football party and it scored well.

Recipe from AussieChef at the Fine Cooking board... thanks Aussie! This is a great summer salad, makes an excellent side dish for a picnic, or top with grilled chicken for a simple and delicious main course.

This is one of the recipes I adopted from the Recipezaar account.
