    Arugula is an aromatic salad green that is known as rocket, roquette, rugula and rucola, and is popular in Italian cuisine. Like most salad greens, Arugula is very low in calories. A 1/2 cup serving is two calories. Arugula is grown for both it's leaves and the seed. The seed was used for flavoring oils. On another interesting note, Rocket or Arugula seed has been used as an ingredient in aphrodisiac concoctions dating back to the first century, AD. (Cambridge World History of Food). Arugula supplies folate (folic acid) and some calcium (which is unusual in a salad green--for example, arugula has more than eight times as much of this bone-building mineral as iceberg lettuce). A cruciferous vegetable containing cancer-fighting phytochemicals called indoles. High in vitamins A and C it`s dark green color and tart flavor are an indication that it also contains some beta-carotene and vitamin C (more than any other salad green).

    Skip the salt and pepper because the salty taste you'll get from the cheese and the arugula will give you a nice bite! I used optional Recipe #149428 for the cheese.

    I used lean ground turkey adding the diced veggies to it so no added oil is used. This has lots of flavor and nutrients. Let me tell you that it's so good you'll go into the fridge and sneak a bite of it cold. It seems like a lot of arugula but it cooks down to just look like a bunch of herbs. I find this a great way to get greens into my family. Go ahead and use spinach if you can't get arugula. Use to top any pasta, rice, lasagna, pizza or eat it straight. Do freeze the leftovers for soups or whatever you enjoy!

    This is a healthy dish using a potato to hold the arugula and sundried tomatoes together in the flouder roll topped with pine nuts. Cooking time depends on how thick th flounder is. You can also lay the flounder down next to each other, fill and roll up together in one roll, baking time may be a bit longer for this.

    I came up with this simple spring salad when my garden gave me a bunch of arugula coming up from last years seeds. Then at Trader Joe's was French green beans right from France. And fresh strawberries................. I added spring scallions and my fabulous dill mustard dressing made with my Recipe #53926 giving this dressing a what is that flavor? But go ahead and use you favorite sugars........ This is so healthy and yummy you may feel guilty eating this.
