    Arugula

Arugula is an aromatic salad green that is known as rocket, roquette, rugula and rucola, and is popular in Italian cuisine. Like most salad greens, Arugula is very low in calories. A 1/2 cup serving is two calories. Arugula is grown for both it's leaves and the seed. The seed was used for flavoring oils. On another interesting note, Rocket or Arugula seed has been used as an ingredient in aphrodisiac concoctions dating back to the first century, AD. (Cambridge World History of Food). Arugula supplies folate (folic acid) and some calcium (which is unusual in a salad green--for example, arugula has more than eight times as much of this bone-building mineral as iceberg lettuce). A cruciferous vegetable containing cancer-fighting phytochemicals called indoles. High in vitamins A and C it`s dark green color and tart flavor are an indication that it also contains some beta-carotene and vitamin C (more than any other salad green).

OK arugula lovers this ones for you! If not you can use spinach. I've also added fresh slices of clementines and or raspberries. Yummy my mouth is watering!

Skip the salt and pepper because the salty taste you'll get from the cheese and the arugula will give you a nice bite! I used optional Recipe #149428 for the cheese.

    Recipe #233193

I used lean ground turkey adding the diced veggies to it so no added oil is used. This has lots of flavor and nutrients. Let me tell you that it's so good you'll go into the fridge and sneak a bite of it cold. It seems like a lot of arugula but it cooks down to just look like a bunch of herbs. I find this a great way to get greens into my family. Go ahead and use spinach if you can't get arugula. Use to top any pasta, rice, lasagna, pizza or eat it straight. Do freeze the leftovers for soups or whatever you enjoy!

These are fried potato balls crisp on the outside and creamy soft inside. I used arugula but spinach is just as good!Arugula's pungent flavor adds interest to these croquettes!

This is a healthy dish using a potato to hold the arugula and sundried tomatoes together in the flouder roll topped with pine nuts. Cooking time depends on how thick th flounder is. You can also lay the flounder down next to each other, fill and roll up together in one roll, baking time may be a bit longer for this.

Garlic mashed potatoes with blue cheese and arugula. This is a nice intro to arugula which is bitter and the mixture with potatoes and cheese calms it.

Arrugula, Garden Rocket, Gargeer, Rocket, Rocket Salad, Roka, Roquette, Rucola, Rugula, Salad Rocket and Tira what ever you want to call it is a bitter, aromatic green with a peppery mustard flavor. Topping with cheese will cut the bitterness.

    Recipe #159239

This is low in fat with no additional dressing keeping the fat down even more. Arugula has a peppery taste that goes nicely with the creamy cheese and crunchy pears while the mushrooms give it a meaty feel. For added texture add some toasted nuts.

Nasturtium has a peppery flavor. You've got creaminess from the avocado, sweetness and saltiness from the nuts and apple chips. You can find Apple chips in bags in your produce section of the market or make them. I have a great recipe for them. These dressing are great choices for this salad but use what you like. Maple Dijon Dressing recipe #121271, Lavender Salad Dressing recipe #63379,Or the dresing from this recipe Baby Greens With Strawberries With a Poppy Seed Dressing recipe #12244 Or squeeze lemon juice on it to keep it low calorie. This serves 1 for a meal or 2 for sides.
