I couldn't find a recipe here on 'zaar for this Indian dish, so I went searching on the net. With those recipes I found as a start, I created my own version, which is a bit healthier than the original, and easier, too. Papri is the name given to the crunchy bits of fried flatbread mixed into this salad. I use an easier and lower fat alternative in baking strips of prepared flatbreads. This must be tossed or assembled right before serving, or the papri become soggy.
I started eating this stuff after a great pita sandwich at the Pita Pit. I make mine with more garlic (cuz I don't have to suit everyone's taste, like a restaurant!).
NOTE: the garbanzo's may offend a baba purist, but make for a stiffer spread and a different taste - try both ways and enjoy!
This is a delightfully sweet and tangy snack or side dish made with chickpeas and potatoes. Tamarind paste is readily available in Indian grocery stores.
Update based on a review - Shallots can be substituted with mild onions and is meant to be raw. This imparts a special crunchy flavor that is excellent in all Indian chaat and some Indian salads. Also remember that tamarind is a distinctive taste and if you're new to it, start with less and go by taste. Experiment and enjoy!
Since I make these all the time I really don't even bother to measure, the ingredient amounts listed are close to the amounts I usually use you can adjust the amounts to taste, I have left the Parmesan as optional I like to add it in --- for the best texture the potatoes must be russet and they should be oven-baked --- I have use panko in place of the butter crackers but I think the crackers give a better taste --- yield is only estimated depending on the size you make the croquettes --- you may make the mashed potato mixture up to 24 hours in advance and refrigerate until ready to roll and bake ----- you will love these!
These are a great starter that will keep the whole family happy, including the kids! A recipe I knocked up for my 6-year-old son, now we all eat them. Easy to make and great served with some cherry tomatoes.
