I got this from the coupon inserts in our Sunday paper, and it turned out to be a great snack to eat while watching football, NASCAR, etc. Easy to make, fairly inexpensive and something a little different.

This is an adopted recipe that I have adjusted to include exact amounts for the ingredients. I used a pint of Canned Basic Salsa (Recipe #39094) when I prepared it and found that while it was flavorful, it wasn't spicy at all. You may want to add hot sauce, cayenne pepper or diced jalapenos if you like things kicked up a notch. I also melted my cheese in the microwave and stirred in the other ingredients before pouring into a mini crockpot for serving. You will want to keep an eye on it, if you serve it this way. The cheese can separate if it gets too hot in the crockpot.
Heavenly is all I can say!! I had these cookies on a trip many years ago while staying at a Doubletree Hotel (they left one on each pillow each day after cleaning the rooms) and always thought they were "THE BEST" chocolate chip cookies I had ever eaten! I have searched High and Low for a recipe for anything similar to what I had eaten at the Doubletree and recently found this recipe (unfortunately I can't remember where I got the recipe from)and have made them several times since. They are a little more time-consuming than regular chocolate chip cookies but well worth the extra time! This recipe makes extra large cookies. I'm not sure as to the exact prep time and I don't always chill the dough overnight) From Even More Top Secret Recipes.
My wife really likes these. Several times a year she volunteers me to make them for potlucks and such at her place of employment. Sometimes, as I lay awake at night, I think these enchiladas may be what finally convinced her to marry me. (WARNING: If you don't like cheese,or if you're afraid of a little thing like a clogged artery, these are not for you).
This is my variation of Cowboy Caviar. My mother got it from a friend, and passed it on to me (thanks, Mom!). It is a favorite with my side of the family, and my in-laws enjoy it very well, too. It makes a pretty big batch, but you'll be surprised at how quickly it vanishes! Avocado will turn brown, so don't make this too far in advance.
This dip is easy and delicious!!! Your friends and family will not be able to get enough! It is important that you do not substitute the Miracle Whip for any other mayonnaise, because it will not have the same flavor. This is the true taste of Bacon, Lettuce, and Tomato! We worked years to perfect the seasonings as most mixes were too salty for our taste. We laugh everytime we make it as the dogs go crazy. They know I have mixing issues (it goes all over), so it's like Pavlovs dogs every 15 minutes while it's cooking! Everyone goes racing into the kitchen! YIKES!!
