This is a recipe that I adapted slightly from Rachael Ray. It is fantastic and has unusual flavors. It tastes even better the second day after the flavors have soaked into the shrimp. Serve with rice pilaf and a green veggie or salad to make it a main dish.
This recipe is great served over rice for dinner, or alone as an appetizer at a party. As with most of my recipes here, prep time is approximate, which includes shaping the meatballs. Cook time depends on how long it takes for your meatballs to brown.
I got this great idea from a magazine my friend got. She told me the basics, I went home and gave it a try. It worked out beautifully. I can only imagine how beautiful the presentation would be using these as salad shells. They have a lacy, delicate look to them.
This is a delicious concoction that seems like it took a lot of time but you can whip up in about 10 minutes under pressure. You start with jarred salsa (whatever heat you like) and freshen it up with jalapeno, avocado, onion and shrimp. A shot of lime brightens the flavor and you're ready to hit the patio for a visit with your company. Also great to take to a cookout. Try it with the Chili-Lime Tortilla Chips.
There's a large Middle Eastern population in Bayridge Brooklyn and amazing restaurants line the avenues...hummus is served with every dish on the menu...it's one of my favorite things in the whole wide world...if you haven't tried it, please do. I think you'll love it!
I have served these for dinner over rice and my family loved them. I've also served as appetizers, by putting them in a warm crockpot after making them. Delicious! It took me 1 1/4 hour to make this from start to finish.
I have made complicated marinades in the past but shrimp are so delicious they need nothing more than this treatment. Subtle flavors and the shrimp stay juicy. Alter as needed for the amount of shrimp you have.
Yummy!! This is something a little different and very tasty! Next time I'm planning on Making a HUGE batch, frying them and flash freezing them on cookie sheets so my husband and kids can heat them up when they want too, or so I have a ready made appetizer for unexpected guests!!
