    This is a fun and easy take on "Fish & Chips" that is so yummy!! My husband and I went to an open house and they served something similar so I went home and whipped up my own creation which I actually think tasted better!     A delicious and extremely quick-to-make recipe which I was delighted to find in the October-November 2008 issue of 'dish'. As I don't like hot and spicy flavours, I made these with a mild paprika. Those who do like foods hot and spicy might want to add cayenne pepper. Please, do adjust the spices to meet your taste preferences. As almonds boost energy levels particularly at those times such as early afternoon when - given the choice - many of us may choose to have a siesta, I intend to have these on hand in a container at all times at work as a quick energy-boosting snack. I've found that even half a dozen almonds can provide the boost needed at such times, and these will offer a more flavoursome alternative to plain almonds.

    This is from my cookbook entitled "Recipes from the Old South". This is a Richmond, VA heirloom recipe. Serve on your favorite cracker or on whatever suits your taste. I have not had this, but wanted to share it with you. Hope you enjoy! Edited: I have now prepared this recipe. I really enjoyed it. It is a very different version of pimento cheese. I did not put mine in a food processor. I used fancy shredded cheese, chopped the onions and pimentos with my Pampered Chef chopper. Then I just mixed all the ingredients together. This was much easier and less clean up. This would be good served on celery sticks as a hors d'oeuvre. This recipe is easily halved or quartered for a first time trial.
