These festive pinwheel appetizers are perfect for the holidays, or anytime! Very popular with my family and guests---everyone really loves the great flavor combo of tangy chèvre cheese (or feta), sweet-tart cranberries, green onions, walnuts (or pistachios), and herbs. Easily made in advance, and I have frozen the logs (before slicing) with great results. Note: If you can't find chevre cheese, crumbled feta is equally good. A slight modification of recipe 146700-- thanks Wildflour!

These cheese crisps are very versatile....sprinkle them into a green salad, use with hors d'oeuvres, serve with cocktails, use as a garnish on macaroni and cheese, or just snack on them! Lots of different cheeses could be used, just make sure you use a hard cheese....if it's too soft it will just melt and spread to form a uniform sheet of cheese in your pan. Play around with the flavorings too...I've just added the red pepper but you can use sweet or hot chile powder or add some cumin, fennel or coriander seeds, lightly crushed. Herbs likie rosemary or thyme can be added as well.

This is a great recipe for leftover aborio rice. I used Recipe #77050. Do use your favorite cooked Mexican rice. This is Italian rice balls gone South! These are great to bring to parties just reheat in 425°F oven for 10 minutes!
