    Asian-Style Fried Dumpling Appetizers
    Handle

These are so easy to make just mix, stuff in the wrappers and fry! Do not cook the pork or shrimp before using in this recipe, they will cook while frying, do not add in more than 1 tablespoon filling into each wrapper or the filling will not cook properly, also you can add in 1/2 teaspoon salt (or to taste) if desired to the filling. Serve the cooked dumplings on the side with your favorite hot chili dipping sauce!

    Best Sticky Chicken Wings
    Handle

For this recipe I strongly suggest to use fresh not frozen thawed wings as frozen will hold in too much water --- you may use 2 tablespoons minced fresh garlic in place of garlic powder but the fresh garlic tends to burn while cooking, the choice is up to you or you may use both the powder and fresh garlic, the butter will firm up only slightly when chilled but will melt and blend in with the other ingredients when baked --- plan ahead the wings need to marinate a minimum for 8-24 hours, overnight is better -- these wings are delicious!

    Copycat Win Schulers Bar Cheese

This is as close the real McCoy as you can get. This is a keeper!! I came up with this after much trial and error. Very easy to make and highly addictive! I recommend using good quality fresh prepared horseradish, usually found in the refrigerator section. Instead of Cheese Whiz as listed, I actually used Walmart store brand jarred cheese with EXCELLENT RESULTS!(cheaper too). If you are not a big garlic fan, do not deviate from the amount listed. My first try I used more and it was a bit overpowering, good thing I happen to like garlic. Cook time is chill time.

    Vietnamese Meatballs
    Handle

We made a delicious meal of these, Chinese eggrolls, Thai corn fritters, and nuoc cham dipping sauce. I found variations of this recipe on the web, but adjusted the amounts for the best flavor. These can also be grilled. UPDATE: I can't vouch for it being authentically Vietnamese, though the recipes I combined to make this were labeled that way. Also, I don't think fish sauce is a particularly Korean ingredient. I'd change the name to Asian Meatballs but that would mess up the URL.

A big hit at our wedding. Meatballs can be formed 1 day ahead and kept in refrigerator uncooked, and then just cooked and served.

    Oyster Fritters
    Handle

I like pan-fried oysters, but those are rolled in cornmeal, not typical appetizer fare. These little fritters can be served as both appys and entrees. I am not sure of the serving size because that all depends on how big or little you make them. So, I'm just stating that the yield is one batch.

    Nachos Dip (Served Hot)
    Handle

This is my most requested recipe. Originally it came from our friend Steph but the recipe keeps getting passed on because it is just so good. I usually make double because DH cannot have the cheese or sour cream any more so I make one with and one without. It can be made with as much garlic and chilli as you desire. Hope you enjoy it as much as we still do after all these years. I had to guess how much cheese and sour cream I use, it depends on size of your dish. Also guessed on servings, at most parties you have other appetizers so it can serve many more guests.

    Quickie Cucumber Tea Sandwiches
    Handle

One of my favorite tea sandwiches is Ms. Jenny Benedictine's cucumber spread. This is a little twist on that spread. It's got a bit more herbs in it that her original recipe. Great for an afternoon snack or a fancy tea-time tray. Passive time is chill time.

    Vietnamese Spring Rolls
    Handle

These spring rolls, served with dipping sauce are a favorite at our house. While they are a little tedious to make, the recipe makes about 20, so they can be frozen and then just thawed the next time. Cook time is approximate, it will depend on how many you make, and whether you need to do them in batches.

Ms. Jenny Benedict's Famous Cucumber Spread
    Handle

This cucumber finger sandwich filling was created by Jenny Benedict, a popular caterer in Louisville, KY way back when. Now, it is a Kentucky favorite and dang near a recipe you MUST have on the table for a Derby party. This is pretty for St. Patty's Day and is so much better than a plain ole cucumber slice on a piece of bread. Cook time is chill time.

Perfect finger sandwiches - the first ones to go at any "tea" or luncheon. From Paula Deen I just tweak the Tabasco a bit...
