This is actually served as an hors d'oeuvre but you can make it into a meal by itself served w/tortilla chips. The richness comes from the mayo and sour cream combination and is actually quite filling.
ETA. After reading Diner's review...feel free to omit the chicken and add 1 lb. or more of cooked ground beef.

Feel free to change or substitute ingredients depending on what is available, and on desired intensity of color. With food coloring this should work as well, but I did not try it!

I recreated this dish from a favorite at a local restaurant. You can easily adjust the heat to taste (I like mine mild) by adding cayenne pepper or red pepper flakes. You can also use a Mexican-style 4 cheese blend for a tasty result!
From the 8/2009 edition of country living. Great no-cook summer recipe if using leftover rice. I reduced the olive oil to 1 tablespoon from 4. Easy to make, fresh tasting, quick and inexpensive too. You can also double the stuffing and eat the rest as a salad (without the tomato).
This spread is so simple to make but it does need to be refrigerated at least 8 hours to allow the flavors to meld. It also may be frozen in an air- tight container for up to 1 month. Thaw in refrigerator at least 24 hours afterwards and stir before serving. Karpathos is a Greek Isle.
A perfect party snack, serve this in a toasted bread bowl for an outstanding presentation. When all the dip is used up from the excess bread, just pie slice the bread bowl and voila!, there's more. Also great served with crostini bread, tortillas, Doritos, or other type of chips, :)
