    Anti-Inflammation Diet Recipes

The recipes in this cookbook are ones that can be used on the anti-inflammation diet. Some of them are fine as-is; others may require minor tweaking. I do include recipes with tomatoes in here; I have found that they are not a food that causes detectable problems for me, although I do try to use them in moderation.

A fantastically versatile recipe, delicious and full of goodness. Make the night before to have some ready to go on a busy morning. This recipe suggests an apple-strawberry filling for the breakfast bars, but any fruit combination is possible. Some other successful fillings include: raspberry jam, marmelade and chopped cranberries, lemon curd and blueberries, strawberry banana, strawberry kiwi, strawberry and raspberry jams with blueberries, mashed banana and peanut butter, nut butter and chocolate chips, peach mango, apple sauce and raisins with cinnamon and brown sugar, raspberry fig, apple and peach, pear and raspberry. Anything you can think of really.

This pea soup recipe has been in my family longer than anyone can remember, and is AT LEAST as old as my great, great grandmother, probably older than that even. My favorite soup ever, and now it is my husbands fave too. This is a vegan version, although it is lacto-vegetarian normally. Meat was only added to the soup by certain members of the family, and typically only for company.

This was originally posted by my cyber-friend Moxie; I was lucky enough to rescue it during a recent recipe 'adoption' drive. Her original intro read: "Sumac has a tangy, citrusy flavor and is very nice with the salmon & balsamic vinegar in this recipe. A little bird told me about the virtues of sumac (ok, it was Chef Canary Girl!), and now I'm a big fan. This recipe came from a website called Global Gourmet. Prep time includes marinating time, and cooking time will depend on the thickness of your salmon, heat of your grill, etc."

Vegetarian dashi. It is a nice broth in its own right but is also a base for countless soups. So simple, so good.

This looks attractive and is very refreshing. If you wish to serve it with a very spicy meal and use it as a cooler omit the chile.

This recipe gives a good start towards a low fat evening meal after a hard day's work. It serves 6 and takes about twenty to twenty-five minutes of preparation time in the kitchen.

Jicama, originally from Mexico, can now be found in the US. It is a root vegetable that tastes like a cross between a water chestnut and an apple and a turnip. This recipe is courtesy of Texas Home Cooking by Cheryl and Bill Jameson.

This is a quick South Beach Diet friendly soup. It is brothy, but the beans are very filling. I adapted a recipe from the cookbook to suit the ingredients that I had on hand.

I always enjoy asparagus - and this is for other asparagus lovers. The carrots add a lovely contrast of color. And it is only 43 calories a serving!

I made Miss Annies recipe #48436 and had the seeds left over so I couldn't throw them out. You can use pumpkin! I like the taste of the seeds without prewashing and drying them.(One less step).

I got a new cookbook on holiday, I also got 15kg butternuts. So I was pretty pleased to find this yummy recipe in the book!! It's a nice texture thing-the pears and the pumpkin.

Butternut squash is a delicious nutty tasting vegetable. Roasting brings out it natural sweetness, which is nicely balanced with the spices. This dish is great with grilled fish or meat, or wonderful on its own with a spoonful of yogurt.

Nice easy veggie dish that can be done ahead and reheated in the microwave. This can also be baked in a 400°F oven for 45 minutes instead of microwaved.
