From the Texas Beef Council posted for the Greek portion of the Zaar World Tour. Feel free to up the seasonings on the beef if you like it really flavorful. As Saraghina states, leftover roast would be great here too!

I adapted this recipe of R. Reisman to make it with chicken breasts - I have also made it with chicken thighs - and both ways are really really good! You can use hot salsa for extra spice.

    Recipe #168080

Gingery chicken with a fruity salsa. Needs to marinate for at least 12 hours. I do it the day before.

    Recipe #39482

This is one of our "I want something different tonight" favorites. So VERY good!

    Recipe #19135

Very tasty and fast. Make it a complete dinner just by adding a salad. It looks like a lot of steps, but it is easy. For a spicier dish, you can also use diced tomatoes with jalapenos. Do not use light or fat-free sour cream because it will curdle during baking. You can also add 1 cup of shredded, cooked chicken along with the black beans and corn in Steps 4 and 5. From the authors of 'Desperation Dinners.'

    Recipe #90633

This recipe has gotten me out of innumerable kitchen emergencies, including unexpected guests, finicky guests, and kids on a hunger strike. It has become so popular in our world that many guests visiting (especially from out of town) request it in advance before they get here. Similarly, many young brides have asked for this recipe as their wedding gift (don't worry--they got a regular gift too!). It can be doubled, tripled, etc., freezes and reheats well, and can handle an almost infinite number of variations (some of which I will include below).

    Recipe #123240

Another take on one of those great low fat recipes from the Podleski sisters. This one gives you extra-tasty oven barbecued chicken thighs.

    Recipe #51230

I love Mexican food and this is another one of my favorites. Lime and chicken are and excellent combination. I found it on the web. Thanks Marissa.

    Recipe #64160

This recipe comes from the Southern Living Homestyle Cooking Cookbook. One of many in my cookbook collection. It's super fast, and I like the sweet pickle relish, it gives it a "kick". Super yummy.

    Betcha can't eat just one!

    Recipe #13526

A versatile barbecue sauce - sweet and spicy. Kind of like magic -- anything I prepare with this sauce disappears! It's a hit with all ages. I've started preparing it with Xylitol, also known as birch sugar, instead of sugar, and it works just great, plus it's easier on blood sugar levels.

    Recipe #59772

An easy hamburger steak recipe, smothered in brown gravy. Good comfort food!

    Recipe #128245

I got this recipe out of a Cooking Light magazine and it is really good. The best part is - it is easier and healthier than most traditional manicottis. It has become one of the regular dinner around here.

    Recipe #123639

From Light&Tasty magazine, this perks up Mom's traditional tuna casserole. It's sure to be comfort food for the whole family.
