Got this from a local radio station. Works very well on a buffet.

A wonderful combination of flavors and color. Quick and easy for week day meals and a wonderful entree for a dinner party. Joining Zaar has reunited me with many old favorites long lost in my 35 year old collection of recipes. This recipe, written on the back of a sales slip, probably came from a doctor's or dentist's office as I looked through magazines while waiting to be seen.

Try this low fat recipe as an alternative to Spanish rice! Prep time does not include the leftover rice cooking.

Southern Living; this is atypical. More creamy, cheesy than spicy tomatoey. I serve it with my sloppy-gloppy chicken enchiladas.

    Recipe #25517

This is from a Carnation evaporated milk label from the early 70s. I serve with seasoned rice. As usual I add some hot pepper too :)

i used to make this all the time when i lived by myself, it's one of the first meals i used to make when i just starting out on my own. it makes a great authentic tasting mexican dish. it is orginally from the Better Homes and Gardens Cookbook, with a few variations. i had to refer back to it, because i am more of a "dump" cook, and nolonger use the measurements when preparing this.

Picadillo. We never liked the raisins in traditional picadillo because it made it too sweet. My friend grew up in Monterrey and her mother made it almost this way and I added a few other things.

    Recipe #8921

Very spicy Southern Colorado Mexican Dish! One of my favorites.

A Texas favorite. A package of taco seasoning could be used in place of the individual seasonings to make it even easier. Boiling time of the chicken is included in the prep. time.

    Recipe #16450

This is a great tasting recipe and so easy that even my daughter doesn't complain when I ask her to make it.

My cousin gave me this recipe. I make it once a month at least. It is a hit with Spanish rice and refried beans.

    Recipe #52150

This is my favorite Chicken Enchiladas recipe. I get requests for this recipe all the time. It's a bit lower in fat because you're not dipping the tortillas in hot oil. This recipe is from Betty Crocker's Chicken Cookbook.

Yummy easy beef enchilada casserole. It has alot of ingredients..but goes together rather quickly. You can add or remove some of the fillers as desired..I think you could even use shredded chicken in place of the beef.

    Recipe #70429

    A recipe from my childhood.

    Recipe #71589

My wife really likes these. Several times a year she volunteers me to make them for potlucks and such at her place of employment. Sometimes, as I lay awake at night, I think these enchiladas may be what finally convinced her to marry me. (WARNING: If you don't like cheese,or if you're afraid of a little thing like a clogged artery, these are not for you).

So good that your kids won't realize that it's not bad for them! Got this out of an old "Cooking Light"
