    Hi! Here is a collection of recipes that are either by folks in or from Alaska, use ingredients typical to Alaska, or are somehow related to Alaska. As you might imagine, there are a lot of fish recipes in here. Note: there is only one Baked Alaska recipe in the collection, included because it explains how/why the dish is called that to begin with. There are many more recipes for the dish on Zaar, if you'd like to look them up. The photo used for the cookbook cover was taken by me in 2002 when I had the wonderful opportunity to visit Alaska myself on a cruise with my mother. Thanks, Mom!

    Takes a little prep time but well worth it. Was developed by a co-worker when I worked up in a fly fishing lodge in Alaska many years ago.

    This recipe came from Carol, of Anchorage, AK, and was posted at the the Alaska Seafood Cookbook website from the Alaska Seafood Marketing Institute. The site suggests to serve with a cool, tangy coleslaw and plenty of cold beer-or something else to quench the fire! This recipe is moderately hot, and you can substitute less spicy sausages, if you like. If you have nice chunks of cooked salmon or halibut, or seared scallops, you can add those when you add the shrimp, too! They make a nice addition.

    This is the best recipe for smoked salmon dip I've tried. It comes from my dad, an Alaskan commercial fisherman, who makes the best smoked fish around. This dip is creamier than a lot of the pate' style smoked salmon spreads. You won't find your chips and crackers snapping in half as you go in for a dip. The green onions give it a little added texture and the garlic makes it more savory. If you don't have your own smoked salmon, you can always buy some at the supermarket. Just make sure it's wild Alaskan salmon!

    My sister in Alaska gave me this recipe. They know how to smoke salmon up there. The prep time does not include the soak and overnight refrigerator time. The amount of salmon fillets is an estimate. You are good as long as the marinate covers the salmon. My sister uses an electric Little Chief Smoker and I use a charcoal smoker. I believe hers turns out better. Times are for her smoker. Serving size is a guess also.

    This recipe is from an engineer (and friend) who worked for me up in Alaska about 25 years ago. Wait until your local supermarket has their family-pack CHEAP hamburger on sale to make this. You really do not want to use the good stuff; the fatter the better for best final flavor and texture.

    After our recent trip to Alaska, I have a renewed interest in sourdough baking. I found this recipe at Alaska Travel Magazine.Com. DH loves cornbread and this is a great recipe. It is a little different than traditional cornbread with a mild sour flavor. I updated the cooking time after 16Paws review and my preparing the recipe again and watching the time closely. Be cautious when adding the milk due to differences in starter with regards to "wetness".

    Being an Alaskan, I am always looking for new ways to prepare salmon. I came up with this recipe and have had people who don't even like salmon tell me it's good. We usually cook this on our grill but I have done it in the oven also and it has turned out just as good. Practically within throwing distance of the Copper River, I prefer Copper River red salmon, however, silver and king salmon work great as well!

    I make several batches of this each summer when the fireweed in Alaska is in bloom. My kids always help pick the blooms and are always eager to eat the finished product. Its important that only the blooms are harvested - not the stems. Also, I have tried this recipe several times with Certo and it will not set so be sure to use Sure-Jell or a powdered pectin. Prep time is estimated (depends on how long it takes you to pick fireweed, I guess!) Extra juice can be stored in fridge or freezer.

    We eat a lot of salmon in our household as my father is a commercial fisherman in Alaska. I prepare salmon numerous ways, but this is always my favorite way to make salmon when I have company. Even people who say, "I don't care for fish, I'll have a small piece," usually end up having heaping seconds. Enjoy and PLEASE DON’T USE Farmed Fish for this recipe aka...Atlantic salmon. It’s bad for you and it doesn’t taste nearly as good.
