    A TASTE OF YELLOW-LiveStrong! Cookbook

I was honored to have been asked to host the LiveStrong event which celebrated cancer survivors and we showed our support by picking recipes with yellow in them, making, and then photographing them. Here are the recipes made.

A cheesy, crisp little snacky for anytime.

I love grilling vegetables, not only because they taste delicious, but I find it quite handy to cook an entire meal outdoors--- and it is nice to avoid heating up the kitchen during the hot summer months. This is a super quick side, no time spent peeling, slicing, or dicing. Just halve your squash, mix up your sauce, and get right down to the grilling business. This recipe (adapted from fooddownunder.com) does not call for any salt, but I really felt it needed some, so I gave the squash a generous sprinkling of kosher salt after it came off the grill. Unless you are watching your sodium intake, I think the flavor definitely benefits from a good dose of salt.

A really easy but interesting chicken salad with curry and green apples. Good on crackers, sandwiches, or straight out of the mixing bowl.

    Recipe #283402

This recipe was given to one of my Uncles 25 years ago from a co-worker. It has been a much requested recipe in our family ever since. One of my favorites. *The secret to the lemony flavor is the thin glaze which sinks into the cake and then hardens and gives it a really nice texture. I love the bottom where the glaze is thickest!

I just love this simple velvety smooth cheese sauce--it's so easy, cheesy and good! Yummy drizzled over cooked broccoli or cauliflower, or just about anything. Enjoy! Note: Measurements are approximate, use more or less to taste. As the cheese sauce cools, it will thicken; gently reheat to serve (you can whisk in a small amount of milk or water, if needed).

These are a big favorite in our house. It is a healthy alternative to frying the potatoes. The outside of the potato gets crisp and the inside gets soft. I have used several different types of potatoes and have had great results with all of them although the cooking time will need to be varied with the creamer types.

From www.TopSecretRecipes.com. A copycat of KFC's yummy coleslaw.

These are sooo yummy! They taste almost like fried catfish because of the cornmeal, and come out nice and crispy on the outside and soft on the inside. The ranch dressing adds a real zing, too!

Found this recipe while looking for a different one, & thought the lemon & chocolate combo sounded interesting! It's on my to-make list! If you plan on having this bark at room temperature for long periods of time, you should temper the chocolate to make it temperature-stable.

    Recipe #292089

Great for the summertime and warm weather!

Great with corned beef. Can be kept in the fridge for a couple of months

    Recipe #16082

Rich, moist and delicious. I use this recipe as the basis of almost every cake I make, adjusting flavourings for variety. Examples are: adding lemon or orange zest; replacing some of the flour with cocoa powder for chocolate cake; almond flavouring; adding chopped apple or peaches. Endless possibilities. A real reliable standby.

    Recipe #99880

Easy and good. Make sure you put the parmesan cheese in...it doesn't taste the same without it.

Pearl (Israeli) couscous is more like barley in texture, and takes a little longer to cook. Look for it in the ethnic section, or in the pasta section of larger supermarkets. Try to find the "instant" kind, that cooks it 10 minutes. If you can't find it, you may have to add more liquid and cook longer. This one has a touch of East Indian spices. Good with grilled salmon or pork tenderloin. There are as many variations of Garam Masala (spice mix) as there are cooks :). I like mine with a tad more cinnamon than some. There are several recipes here on 'Zaar, or you can buy it in specialty shops or larger supermarkets.

This is a favorite of my Boy Scouts that graduated as Eagle Scouts from BSA Troop 47, Littleton, Colorado when I was their Scoutmaster. We challenged the Scouts to do one “gourmet” dish for each campout, and this was my “example” entry to spur them on to doing more than just beans and weenies. They got the idea quickly and not only changed what they were cooking [for the better] but how they prepared and cleaned up their creations. I have one Eagle Scout that is now an award winning chef working in NYC, largely because of his experiences while camping and earning the BSA Cooking Merit Badge.

    Recipe #127113

This rice salad has exotic flavors that make a delicious lunch or side dish.

    Recipe #63805

This was a hit at our teachers luncheon and I ended up buying the cookbook it's from: Better Homes and Garden Easy Everyday Vegetarian.

    Recipe #110561

This is a yummy concoction put out by the US Apple Consumers Association. Enjoy!

    Recipe #221117

This recipe comes from the 10-12 Dec 2004 issue of the USA Weekend newspaper. It's a great tasting fruit bar, but you do need to watch out for any stray cherry pit.
