    Oooey, gooey and oh-so-good you'll want to eat 'em all! But really, save some for the next day or two, as they get better with time...and willpower is a good thing to test from time to time! A good friend brought over a batch of these little beauties as a thank you for hosting a homeschooling (CACHE = Coulee Area Christian Home Educators) function. I've made this right in the baking pan, too---with very good results. Allow pan to cool before cutting otherwise the ooey will be really gooey.

    A creamy stroganoff using "The Other White Meat". Marinating the pork for 1 hour up to 8 hours is optional, but recommended. Serve over buttered noodles or fluffy white rice. Cook time includes 1 hour marinating time.

    My Granddad was a farmer and made this frequently for my mother during her childhood. Mom made it for me as breakfast or anytime. I've left this recipe in its most basic form. It's not that it can't be gourmet, I just believe that its grandest statement is about cooking convenience and instant belly comfort. To me, that has its own five star merits. Of course, you could add onions and peppers, different cheeses, bacon or ham, leftovers from the fridge, or fancy spice blends. I make it a priority to cook a couple of extra baked potatoes to save for making this later...and it is always good.

    Trying to add different dishes and salads to the "Saturday Lunch at the Farm" crowd brought the dawn of new tastes and new ways of devouring lunch. This salad goes particularly well when "Tommy the Beefsteak Tomato" or "Penelope the Plum tomato" when in the summer you can actually smell the tomatoes maturing and growing big right before you eyes. The use of fresh mint really highlights this simple salad along with the use of fresh scallions, and cucumbers. Even during the cold winter, to bring this bright salad to the table can bring smiles and salad bowls handed down to add just a little more. This is a rustic salad that jumps up and grabs you to behold it. Hey, who said the "Farm" can't be healthful too. Don't hesitate to change the ingredients or using fresh green or red peppers instead of the chilies. Go ahead....it's ok! This is traditionally served with cucumber sauce and yucca fries(you can sub french fries). I have given the recipe for the sauce. Prep time includes marinating overnight.     This is a super-easy, tasty, flavorful, low fat side dish that my husband & I concocted to go with our tequila lime marinated chicken (Lowry's and Super Target in the US carry a yummy 30 minute marinade). I've seen this posted with sour cream and/or cheese added, but we were going for low-fat here. Adding these would cut the heat of the peppers, but by removing many of the seeds we were able to make this just spicy enough while keeping it low fat.
