Pecans With a Kick (Crock Pot)
    Handle
    5 Reviews |  By Mikekey

Diabetic spicy pecans with a little kick! This is just enough cayenne to give that kick. If you like hot and spicy, add more. NOTE: Newer crockpots tend to run at a higher temperature, so you may need to adjust cooking time accordingly!

Smashed Roots and Tubers With Chevre
    Handle
    5 Reviews |  By Mikekey

Root vegies mashed with Chevre cheese. Very good in place of plain mashed potatoes. I served as a side to my "recipe #155658". Try to find a stronger flavor chevre (the more aged, the stronger). If you prefer a creamier texture, add more chevre or some milk while mashing.

    Recipe #205776

    Green Apple Salsa Fresca
    Handle
    5 Reviews |  By Mikekey

I adopted this recipe. I have cleaned up the ingredients list. The original poster gave this description: Serve chilled with tortilla chips. Excellent served with salmon, pork or lamb. (If desired, warm the salsa quickly in a saute pan before spooning over meat or fish.)

    Black Bread (Bread Machine)
    Handle
    5 Reviews |  By Mikekey

A dark Russian rye bread made in the ABM. This uses applesauce for the fat, but vegetable oil can be used instead. Cook times will vary, depending on your machine.

    Recipe #210708

    Rosemary Lemon Fizz
    Handle
    5 Reviews |  By Mikekey

A refreshing summertime cocktail. Time does not include cooling time for syrup. I changed the amount of rosemary originally posted from 1/2 cup to 4 sprigs, which when chopped coarsely, equals about 1/2 cup, but I think others were chopping it too fine to fill the 1/2 cup, and that is why it was too strong. :)

    Recipe #217448

Upside Down Walla Walla Onion Cornbread
    Handle
    5 Reviews |  By Mikekey

This is from an old booklet put out by the Walla Walla Gardeners Association. Walla Walla is in SW Washington state. On recommendations from other chefs, I changed the amount of onions used from 6 to 4.

    Vanilla-Poached Pineapple Sauce
    Handle
    5 Reviews |  By Mikekey

This uses fresh pineapple. Use the sauce for topping low-fat pound cake or angel food cake, or ice cream. From Cooking Light. Cook time does not include chilling time. As suggested by Wicked cook, adjust the amount of water according to how much syrup you want. As per I'm Pat's suggestion, use the de-seeded vanilla bean to make vanilla sugar. See her review for instructions.

Grandma's Crumb Cake Cupcakes (Or Cake)
    Handle
    5 Reviews |  By Mikekey

This is a recipe my grandmother made all the time. I didn't like raisins, so she always made half without. Was I spoiled, or what? Like many of her old recipes that I have found, she didn't have instructions, just ingredients. (she used a wood stove to cook until I was in junior high (1960s), so many of her recipes just said bake in a hot oven, etc.) I tend to write down ingredients but no directions myself! NOTE: See step #8 for directions on baking as an oblong cake.
