    I have been on a watermelon kick lately so when I saw this in a weight loss magazine I knew it was one I wanted to try. Each 1 cup serving is 1 WW point and this is also a core recipe. The original recipe calls for seedless cucumbers. I'm not someone who is bothered by cucumber seeds in things but if you are, use a seedless kind. Cook time is stand time.

    Bau, or opo squash, (calabash, cucuzzi, bottle gourd, etc) is a long pale green squash that can be found at Asian markets. It has a flavor similar to cucumbers mixed with zucchini. My daughter and I love this squash raw to snack on. My sister in law introduced me to this simple soup. She pairs it with Thit Kho, stewed pork, or other Kho recipes. This soup pairs nicely with salty dishes to mellow out the flavors. Can serve over rice to make a light stew. I sometimes add 2 c fish stock and 4 c of water. Prep time varies on how long the squash and shrimp needs to cook. If using this soup as a side to Kho dishes, I use the smaller amount of shrimp. If serving alone over rice, I use more shrimp.

    I found this wonderful recipe in an issue of Gourmet Magazine. I am a mushroom lover and find this recipe fascinating.     This is an amazing salad and an old family recipe from my MIL. This one is special...I promise! Once you try it, you'll be hooked. I'm not too keen on mayonnaise but I LOVE this salad. In the summer, you can make it with garden vegetables. If you're like me, you'll be tempted to leave out the sugar - don't!     My mom threw this together the last time I was at her house and I loved it. I didn't get her exact recipe, but I did my best to recreate it. This is a great, easy recipe for a fresh summer squash crop! I sometimes use a large onion instead of a small one. The onion really soaks up a lot of flavor when it cooks and I absolutely love it. Of course, I really like onion a lot. If you like onions a lot, I recommend using more than called for.
