    These recipes use Crockpot Chicken Taco Meat Crock Pot Chicken Taco Meat to put meals on the table in no time. Cook the recipe as directed and then pack in meal sized ziploc bags. Then subsitute the precooked chicken in the following recipes and dinner prep time is cut in half!

    I had a few cups of enchilada seasoned shredded chicken in the fridge to use up and wanted some chicken and dumplings. I figured that I would just go with the "southwest" theme, and ended up with a dish that we all love. For more spice, just choose a hot salsa.

    This recipe appears by special request. Creamy chicken and green chilies I use the regular sized tortillas.. not the large ones.I overlap the tortillas to make the layer. I make it up in an oblong serving dish, I think it is about a 9 1/2 inch by 11 inch pan. But any size you would put 1 full cake mix into will work well . I love this recipe.

    i used to make this all the time when i lived by myself, it's one of the first meals i used to make when i just starting out on my own. it makes a great authentic tasting mexican dish. it is orginally from the Better Homes and Gardens Cookbook, with a few variations. i had to refer back to it, because i am more of a "dump" cook, and nolonger use the measurements when preparing this.

    Had just a few things in the fridge the other night and came up with this. Surprisingly, it was really good and even my DSs ate every bit on their plates. I used more than 2 cups of cheese however, because in my house, everything goes better with cheese! I topped this with guacomole, more sour cream, more cheese, lettuce, chopped tomatoes and onions.
