    When I was a kid our butcher sometimes had a thing called "City Chicken", which was pork cubes threaded on bamboo skewers to be breaded and fried like fried chicken. I haven't seen that in years. But butcher-pack, boneless, pork loin is always cheap at Sam's Club so here's how I adapted a modern, lighter, healthier favorite for chicken to use on "the other white meat."

BTW, it is pretty versatile. If you don't have sweet wine, try some not so sweet wine and toss in something sweet (honey? sugar?) (not too much) to give it that nice flavor.     I got this recipe a long time ago from a Land O Lakes cooking mag. This is excellent for summer BBQ's as a steak or burger alternative. You can also use different types of cheese as well. You can also broil this dish in the oven at 400 degrees for 30 minutes, then turn over and cook for 20 minutes. You will need to half cook the bacon first if you broil this dish!

    Found this in a Weight Watcher's cookbook of recipes from the magazine in 2000. This is fast to make and has a nice flavour. Not a zingy dish, but the kids and I enjoyed it. 2/3 of a cup is 3 WW points.

    I got this recipe at a potluck 30 years ago, but I had a neighbor who made this 20 years earlier. She had been making them for 50 years before that. It's an old, old recipe. I've found that if the syrup is boiled to just softball or a little lower the coating will come out softer and creamier, more like fudge. Go to softball or just over and it's crunchier. Once I lost track and went to hardball and the coating turned clear and hard. But it was still good. This is the only Christmas candy I make anymore. DH says he knows it's fall when I get fresh nuts and make this.
