    A quick trip to the Mediterranean is offered in the flavors of this simple and succulent stew. The original recipe comes from one of my favorite cookbooks and presented here includes my adjustments. Accompanied by steamed green beans, this is a comforting fall meal.

    An adaptation of a Cooking Light recipe. This is light and refreshing with a pleasing contrast between the sweetness of the orange and dressing, the licorice flavor of the fennel and the saltiness of the olives. Perfect for lunch or brunch. Since there is no dairy involved, this salad travels well.

    As the weather turns chilly, my tastes immediately turn to comforting stews and thick soups. Though I am not a vegetarian, I enjoy having meatless meals a couple of times a week. Saw this one on cooking Light and wanted to post it for future reference. For those on the WW Core program, the stew is Core plus points for the feta garnish.

    As we head towards the last weeks of the Zaar World Tour, I've been looking for Greek dishes that I plan to make in the near future. Lots of garlic and other good spices, this looks like a certain winner to me. As a one dish meal, it works well as a midweek meal and be suitable for reheating leftovers. If you omit the feta, this dish is suitable for the WW Core Program or you can easily count the points.

    Posting this for inclusion in the Zaar Worls Tour. A simple dish from the Greek islan from Cyprus, the would make a nice addition to a meze platter or as a side dish. Though it is an untried dish, it comes from World Vegetarian - a simply wonderful compilation of recipes by Madhur Jaffrey.

    At first glance, the origins of this dish may be a bit confusing. We associate risotto with Italia and the spices are North African. Truth be told, the dish is actually from Cyprus. Bulgur is a frequent menu item for me and I'm looking forward to trying this one as pumpkins become more readily available in the market. The original recipe calls for a much larger amount of oil, I've reduced it to make this dish a little lighter. Posted for the Zaar World Tour.

    At one time, I made these often as a nice treat with a quiet cup of tea. Unlike the other koulourakia recipes posted here, this one is not a butter cookie, rather a nice combination of citrus and walnuts. Though these are traditionally served with a light dusting of powdered sugar, my guess is dipping the ends in chocolate would also work well. More recently tried to reduce the fat by replacing some of the butter, but have not had great results. The addition of applesauce and other fruit purees makes the cookie lose its characteristic crispiness. At best you can swap out 1 or 2 tablespoons of the butter, no more. Preparation time does not include 90 minutes required to chill the dough. This recipe is being posted for the ‘Zaar World Tour.

    A simple dessert or breakfast that brings together two Mediterranean classics. Though the recipe calls for either white or turbinado sugar, the later yields a better carmelization on the figs. Have not tried brown sugar but it may also work quite well.

    I found this wonderful recipe on greek-recipes.com but it started with dried chick peas. Not having the luxury of time, I ended up remaking the recipe with a slightly more convenient ingredients. This can be served either as a side-dish serving 4 or an entrée serving 2.

    Love to entertain and recently was given Martha Stewart’s Hor D’Oeuvres Handbook. Most people eat first with their eyes and Martha's fantabulous dishes offer a visual feast. This original recipe was modeled on her approach to food both in look and flavor. You can simplify the making of these Greek inspired treats by simply quartering the pita bread or using the small ones. Either way, its a treat.

    This salad stands well as its own summertime vegetarian entree or as a side to a simply grilled meat. Chicken and lamb work particularly with these Mediterranean flavors. If watercress is not available, you can use another peppery green such as arugula. Red lentils are best in this recipe as they cook faster and offer a nice visual contrast to the greens.
