Rhubarb is not one of my favorite things to eat but we have some very old plants that produce like crazy. Apparently it isn't something you see a lot of anymore because people are always stopping by our house and asking if they can have some. I mean people we don't even know.
I have been told that this is a great pie when you substitute the blueberries with strawberries.
You can use fresh or frozen Rhubarb and blueberries in this recipe.
I found this recipe in some magazine a few months back. Dad and I have fell in love with it. When I cook something new my dad tells me this recipe is a keeper or toss it. This was a keeper and I was very happy because it is so simple to make.
This was a recipe that my Mother fixed quite often, she loved it. I usually take it to showers and potlucks, always get requests for the recipe. Was requested by so many people at church that we finally put it in the newsletter. I think you will like this, it is different from most pea salads.
My Mother got this recipe from a restaurant in town that has been closed now for years. I make it each year when our church has a fish fry; that is, if I get to go, the last two I have missed. I normally make about a quart of it and, with about 25 people, there is never a drop left. If there should be some left someone always asks me for the leftovers.
