This is an adopted recipe from Mean Chef. Mean Chefs words are: Fresh baby spinach leaves tossed with toasted Pine Nuts, a very tasty vinaigrette, and topped with dried cranberries.

I love couscous salads, you could almost say I collect them!

    Recipe #42002

From the December 2004 issue of Cook's Illustrated Magazine. A salad for bleu cheese lovers. Makes a great company salad for special occasions. For the olive oil I substituted 2 tablespoons of hazelnut oil plus 1 tablespoon of bland oil. A mouthwatering taste of tangy, sweet and tart. Try different types of bleu cheese for variety and personal preference.

I have to take advantage of the wonderful hazelnuts grown in Oregon. This salad recipe always hits the spot. Substitute tangerines or navel oranges for the mandarin oranges if you wish. From

From Clementines can be both expensive and difficult to find as they are only available November through March. Substitute tangerines-honey tangerines being particulatiry good, if you cannot find them. Here is what I found online about the fruit: "Clementines are the tiniest of the mandarins. Imported from Spain, Morocco, and other parts of North Africa, clementines are a cross between a sweet orange and a Chinese mandarin. They are small, very sweet, and usually seedless. Most people think of clementines as small tangerines, but they're a different variety entirely, with a distinctive taste".(

This is one of my favorite salads to throw together. The dressing can be used on almost any salad. I never measure when I'm making salad dressings, so the amounts are approximate.

I have seen this recipe both in Vegetarian Times magazine and on the Food Network website (it was on $40 a Day). It is one of the best things I have ever eaten! Everyone I've ever served it to has loved it, too. The last six ingredients are for the Roasted Garlic Viniagrette that tops the endives.

    Recipe #192443

This is a light salad with a lot of flavor. The dressing makes this salad standout. I like to make it and eat for lunch, or when having a friend over. Makes quite a bit. I sometimes make the dressing and store in the refrigerator and cut ingredients in half.

I love blue cheese! I think it goes so well with so many things. This arranged salad is perfect for company, or for any night of the week. Goes well with beef, salmon, pasta- anything. From the box of Salemville Amish Blue Cheese.

A nice sweet side dish to serve on turkey day. It's a great make ahead dish. Cook time is freeze time.

This light and tangy version of cole slaw is great for picnics or as a side dish to an asian inspired meal. The beautiful mix of colors in the fresh vegies really makes an impressive presentation.

Here's a little different twist on Spinach Salad.

My husband and I both love artichoke hearts and we sure love this salad.

    Recipe #61370

As an appetizer, I serve this on a lettuce bed but its also a great side salad (for non-picky eaters)! It needs to marinate for at least 8 hours.

I was surprised to see that, although quite a number of cucumber-dill recipes are available, nobody seems to have hit on the combination with feta cheese. Light and summery. Good for picknicks as well -- in that case bring the cheese separately and add just before serving. Good-quality olive oil is essential.

An usual but tasty flavor combination from the Austin Jr. League Cookbook...pecans are everywhere in central Texas so this is their own take on a more typical salad. :o)

    Recipe #106382

A friend brought this salad for my family when my daughter was sick. I added the blue cheese and chives because they sounded good. It's now my favorite salad and just in time for spring spinach leaves.
