My friend made this at a party and I just had to have her recipe. This is the best artichoke dip that I have ever tasted. You might want to double the recipe because this stuff will go very quickly! I've made this several times now and the key is to rinse the spinach well before putting it in the recipe. Otherwise you will have green dip! Other cheeses, and cheese blends work fine in place of the parmesan. However, I feel the parmesan gives the best flavor combination. Fresh lemon juice really makes this recipe different from other spinach artichoke dips and adds a much needed zing to the recipe. Its also best to use the freshest garlic you can get your hands on.

Update: 07/21/2008. . . . . . . made this again for supper as I like to serve a light meal - we added more fresh mushrooms, we added more green onions, some pimentos and of course more eggs & bacon. :)
this was a $200.00 winner in the Create with Cheese category in Family Circle. The sweetness of the berries balances well with the saltiness of the blue cheese. A wonderful and deep flavor experience. The recipe calls for dried blueberries, but I had trouble finding them, so I used frozen berries but thawed them before using. Be careful when adding berries--stir gently or you will end up with blue appetizer. Cooking time is refrigeration time.

It is a delicious and quick appetizer, or could also be the "bread" accompaniment to any main course, either way, your family and friends will "gobble" it up!! I always thought my deviled eggs were good, until I tasted these at a Hanukah party. The lady who brought them was kind enough to share her recipe. Cook time is chill time for the finished deviled eggs.
I'm not sure where my brother got this recipe, but it is packed full of flavor and worthy of restaurants. My brother uses freeze dried herbs in this recipe, but I would assume fresh herbs would be just as wonderful. This olive oil dip is perfect for any crusty type artisan bread. Hope you enjoy!
