    These are the best of the best in old-fashioned pancakes. (Thank you, Halifax Liz for letting me know that your grandmother was making these in Northern Ireland 70 years ago.) It's no wonder a recipe like this has such staying power, they're super easy & make use of on-hand ingredients. The secret to their firm but fluffy texture is using tiny cubes of white bread to support the batter. But you'll never know they're in there! I've been making this recipe for about 10 years now & I like to serve these pancakes with jams, maple syrup & my homemade syrup from Recipe #22066. I also usually double the recipe if there is more than just the 3 of us eating. The recipe was found in "Pancakes A to Z", one of the three books in my favorite cookbook series by Marie Simmons and there titled "Rux's Family's Favorite Pancakes". My family simply dubbed them "Special Pancakes" and even though it doesn't take a special day to make them, they make ANY day feel special.

    These pancakes are like the pancakes you'd get at a restaurant for breakfast because they're nice and fluffy with a slight sugary flavor. The egg whites give it an airy texture, and it really only takes a couple minutes more effort for a delightful pancake. I found this recipe in Family Circle February 2009. They suggest dropping 6 blueberries onto each round just before you flip it or sprinkle a little ground flaxseed for a nutrient boost.

    Is your tummy ravenous for real food? These hearty waffles made with whole wheat flour, honey, oats, and chopped nuts (I used pecans) will give you energy for the day. I found this recipe in Taste of Home Parties, Potlucks, and Barbecues from Joan Scott of Dunbar, Wisconsin. She found it in a church cookbook years ago and even occasionally serves them for supper. Taste of Home recommends for a quick waffle topping, sprinkle with fresh berries (strawberries, raspberries, or blueberries). Then melt some jelly with a squirt of lemon juice in the microwave and drizzle over the waffles.

    This is a very quick and simple breakfast dish but looks very impressive. The apples, cranberries, cinnamon and maple syrup are wonderful together. Toasted pecans would also be good sprinkled over the apple slices with the cranberries. Serve with with warm maple syrup or fresh apple butter. Recipe from Arsenic and Old Lace Bed & Breakfast Inn.

    I was playing around in the kitchen today and came up with these pancakes. My family really loved them so I'm posting so I wont forget how I made them. We served them with sugar free syrup.     P'at is the Korean name for the azuki bean, the source of the "sweet red bean paste" often used in Asian desserts. They have a delicious rich flavor which I find matches well with the creaminess of an Indian-style lassi. You should be able to find canned sweetened azuki beans at any Asian supermarket. "Plain" yogurt in Korea always has sweeteners added, if using the more natural type, you may wish to add a touch more sugar to this, depending on the sweetness of the azuki beans.
