    This recipe is quick and easy. My boys like it because the shrimp makes them think they are eating "high-style" (their words). I like it because it can be on the table in less than 30 minutes.

    Lemons and wine give this hearty, elegant soup a naturally tart flavor; this may be magnified if you substitute Neufchatel cheese for the cream cheese. (I'm a big fan of piquant/tart flavors, and like it both ways!) I use those inexpensive "lox bits" from the supermarket or deli, and am always surprised at how tender they become after cooking.     I saw this unusual chowder recipe in a recent New York Times newspaper and clipped it out. I haven't yet made this. Sea scallops are giant scallops. The instructions call for a 30 minutes resting time to allow the soup to cool slightly & thicken before serving. I have not included this in the cook time info. Clearly, this is not a dieter's soup and would only be for special occasions.

    This dish was created by my mother's cousin in order for him to achieve his Eagle Scout cooking medal in the 1940s. It has been a favorite of all who've tasted it. It freezes well and tastes even better reheated. A great cold weather dish that serves a bunch of people and goes well with cornbread. People try to improve the original recipe by adding more vegetables, but then it just becomes vegetable soup.
