My husband rarely would eat rice until he tasted this recipe. My Native American great grandmother passed on her recipes to my grandmother, who in turn added, deleted and passed on to my mother, who in turn added, deleted & passed on to me. I never saw any of them ever measure anything, it was always a dash, pinch, palm or handful(s)etc. Every stage was taste tested for preference. The below recipe is my modern version of what was handed down from my great grandmother. *maple flavored bacon is an added surprize (Kids love it). **Best to start with cold cooked rice (left overs?) ***This dish is savory & spicy enough to not include salt & pepper in the ingredients-let each individual salt & paper to taste. ****This was always served with my mother’s cracklin corn bread, another great recipe I’ll try & share later when I can figure out the measurements! lol

This is so yummy. Has just the right amount of spice for us. Pretty easy to make too. I made it easier by cooking the bacon in the microwave. This is my version of Kimke's Bacon Green Chili Quiche. After the last couple of reviews I have stated the size of pie crust to use.

A corn soufflé or pudding that can be eaten with Recipe #117915 or with pork in Salsa verde. Some people add sugar or honey. I personally prefer it without sweetener. If you like corn you will love this recipe. It can be made ahead of time and refrigerated or frozen until ready to serve.

This recipe appears by special request. Creamy chicken and green chilies I use the regular sized tortillas.. not the large ones.I overlap the tortillas to make the layer. I make it up in an oblong serving dish, I think it is about a 9 1/2 inch by 11 inch pan. But any size you would put 1 full cake mix into will work well . I love this recipe.

Enchiladas with a unique garlic flair, unlike any other enchilada I have ever tasted. The house smells WONDERFUL when these are baking. Although they do take some time to prepare, the work is definitely worth the reward! The ingredients are mostly things that you probably already have stocked in the cupboard. (Cook time includes stovetop and baking times)

This recipe came from the cookbook "Take Five for Every Occasion". All of the recipes require only 5 ingredients and are easy to make. My oldest daughter, Amy, doesn't like chicken, but she will eat this. It has a punch to it from the Ro-tel tomatoes. I've never timed the recipe so 30 minutes is prep. time which is cooking the vermicelli and cooking and chopping the chicken after it cools. The process cheese can be cubed or shredded. I've always cubed mine, because Velveeta will stick to any tool used to shred it.

I came across this in Taste of Home's Quick Cooking. Was unsure about it, but took a chance and love it. The corn chips gives it a crunch and the lettuce and tomatoe add a cool crispiness that add to the warm creaminess of the rice and chicken. It is extreamly wonderful. I've served it at a Bible Study and everyone loved it.

Easy to assemble, deliciously creamy and a great choice for once-a-month cooking. And there is NO canned cream soup in my enchiladas -- Hope you give them a try!

This is a yummy easy recipe. 1 breast is 4 pts. I often used the flash frozen breasts for this. I use 4 4oz breasts.

An alternative enchiladas for variety and those who can't eat tomato-based sauces. This is very mild so if you want it spicier, try throwing in a jalapeño or two.

This is a great accompaniment for a Mexican feast. A spicy, different way to prepare fresh summer squash.

This simple tasty side dish is great for potlucks. So far three people who said they didn't like hominy have asked me for the recipe. Oops. Make that two people. The third person gets it made for her since she is married to me.

Wow! My brother Jeff made this for us to snack on this past Christmas Day. All the flavors meld together nicely, and I love the different textures. You won't be disappointed!

This tastes just like a taco in a bowl! Be sure to heat it up so that all the cheese melts. ;)
