One of my favorite meals is tex-mex; so what's new, huh?

This is a variation of your traditional Pico that my college roommates and I started making -- motivated mainly by our desire to get avocados into any and all food in one way or another.

I made this up to use leftover grilled steak. It's a delicious, hearty soup that is perfect with a salad and some homemade biscuits or beer bread on the side. Almost any kind of steak should work, although we usually grill New York, porterhouse, or sirloin. If you don't usually have leftover steak, you can always grill an extra one just so you can make this soup! You can adjust the heat by using a milder or hotter salsa, adding cayenne or chipotle, or adding jalepeno or other hot peppers.

A different tasty salad. After having this at a potluck, I had to have the recipe.

My mom was given this recipe while I was in Junior High. Great for a quick meal on the go - served me well while I was working and raising 3 boys.

I like this version so much better than the sweet stuff.

This is a skillet meal from Light and Tasty Magazine. We found it a little spicy so we use a half can of each the milder and regular Rotels. We use the 75% fat free Cabot white cheddar cheese. This has turned into a family favorite and is healthy as well.

I made these yesterday for my Holiday Appetizer Party with my cooking and recipes group and they were really good! The amount is approximate, depending on how much you fill the scoops. I had some scoops left over when I got done making mine.

This is my daughter's absolute favorite meal and she requests it any time she can. She always has me make it for her new boyfriends' first meal at our house. Hopefully I can stop making them for that occasion because I really like her current boyfriend (UPDATE 2008: Guess I have to keep making these 'cuz the boyfriend turned fiance ended up being a DUD) :-)! Everyone always gives this meal great reviews and although it is a bit time-consuming, it is very much worth it! Start the Meat and Bean Mixture first and then when you take the lid of the pan to reduce the liquid, start the Fry Bread recipe so that they are still warm when you are ready to serve.

I love these empanadas! I make this version when I just don't have time a lot of time. The tomatoes in the filling keep it moist.

Recipe #262554

This is a recipe that my sister got from a friend. It is served cold so it is different from most dips that you eat with chips but very good and simple!

Recipe #239403

This is sooooo easy. A great way to use the pickings from your rotisserie chicken, or the leftover turkey from Thankgiving dinner. Serve with a simple green salad for a fuss-free dinner.

Recipe #239874

My mother-in-law has been making these family favorite enchiladas since the early '60. It was their traditional Friday night supper back then. She would make some with onions, and some without since my husband did not like the onions. Their simple and good.

A simple dip to make for parties, or everyday snacks!

This combination of sour cream and lime is to die for (if you like limes lol). I use it instead of plain sour cream in lots of recipes, and have changed it to tangerine, lemon or other citrus fruits as well. 3 recipes on zaar use it, but it deserves its own spot as a condiment in its own right

Recipe #239431

This is another one of those things we always ate at grandma's, but that I didn't realize was kind of weird until I met people from other families. It is really good, though!

Will be making this next week, looks great! Nice easy Mexican meat & potatoes... UPDATE: having made this, I would have used at least a tablespoon of taco seasoning to get it up to what we like, also chopped and cooked up an onion with the beef. Definately needed some more spices for our taste! Easy weeknight dinner!

Recipe #134992

Using left-over taco meat filling in a delicious and easy sandwich. Prep time does not include cooking the ground beef.

We like to liberally douse this delicious dish with our favorite hot sauce...Cholula. It's a recipe that will please both family and friends.

A traditional and popular Southwestern dish.

This untried dish is reminiscent of the more common chili verde except that the stock is made from dried rather than fresh chiles. As a big fan of the smoky ancho, it appeals to me and will soon make an appearance on my dinner table. In the meantime, I'm posting here for my fellow foodies.
