Poultry Main Dishes

Chicken is a delicacy and a treat in our home. I almost never buy it due to our 'connections' for pork and beef. When I do buy it, I usually buy bulk packages of boneless, skinless breasts and then if I use it in a casserole or some other such dish, my husband feels I'm wasting it. It still happens, but I'm trying to buy cheaper cuts of chicken for those types of recipes. If you have any good 'miscellaneous chicken parts' recipes, please recommend them!!

A wonderful and quick main course just add a veggie and side dish and you have a nice healthy dinner Just added 8-28-04: You can also add chopped tomatoes on top with the green onions and if your in a hurry use the precooked bacon, you can cook the chicken on a grill it tastes wonderful as well!

A delicious rosemary and orange flavored roast chicken that is a big hit with family and friends. Recipe works equally well with chicken pieces. A wonderful warm, hearty recipe from Company's Coming Main Courses. The gravy is delicious and perfect for baked potatoes. I add a bit of oregano and garlic for extra flavour, but omit the salt, just in case the bacon adds enough. I usually fry the bacon a little before adding the chicken, too, otherwise it never seems to get crunchy for me!
