    Pizza, Casseroles, and Other One-Dish Meals

    Casseroles used to be pretty much all we ate until I quit my job to be a full-time stay-at-home mom. Now it doesn't happen nearly as often, especially in summer, but as far as generally easy, warm, and comforting foods go, you just can't beat a good casserole.

    Ground turkey or bulk Italian sausage meat may be substituted for ground beef --- I also added in a small chopped green bell pepper into the ground beef mixture

    This is one of my favourite things to make when I suddenly have to feed more people than I'd anticipated. (or any other time!) Due to the nature of the recipe, you can use more or less potatoes or vegetables, depending on what you have on hand -- or how far you need this one-dish meal to stretch!! Freezes well.     Without meaning to brag, this is the best lasagne recipe I've ever tasted. It's perfect if you're trying to figure out what to do with ground venison because the tomato sauce does an incredible job of removing/masking the wild taste, but of course you can use ground beef as well. Even "Oh, I don't eat deer meat" people will love this -- just don't tell them until afterwards! My recipe book says the fennel is optional, but that's your KILLER SECRET INGREDIENT! It's not optional in my opinion!! You could also add a package of frozen spinach (thawed and drained) as well.

    I'm not sure where my mom got this recipe, but these are THE BEST MEAT BUNS EVER -- but sadly, they're NOT quick and easy, so make a day of it and fill your freezer! Plan ahead because the dough's easier to work with if it's refrigerated overnight. Serve with plum sauce -- that's right, plum sauce. You'll never be sorry.

    Wish you could smell my kitchen right now, I'm dyin'! Made a huge pot of this for catering tomorrow. It's taking everything I've got not to just dive into the pot! This serves at least 10-12, but you can easily cut it in half, or freeze the leftovers for a rainy (or snowy!) day!
