Casseroles used to be pretty much all we ate until I quit my job to be a full-time stay-at-home mom. Now it doesn't happen nearly as often, especially in summer, but as far as generally easy, warm, and comforting foods go, you just can't beat a good casserole.
My husband and father-in-law love this! It's a bit time-consuming, but worth the spectacular results. Truly a handsome dish! From one of those Pillsbury mini-magazine things you buy at the supermarket. Please note that you can use leftover mashed potatoes as well, or make homemade if you really hate instant!

This is a deceptive recipe: quick and easy to make with a simple ingredient list but which really delivers the flavor. What more could you want from chicken and potatoes? I find one large lemon yields just about 1/4 cup juice. This recipe makes 4 servings, but my husband and I eat this easily between the two of us.
I learned this is a recipe from my Home Ec teacher at School. Her name was Miss Ping. She said it was her families favorite. And now it is ours as well. I have changed it a little over the years to suit our tastes. I usually serve this if I know the kids have not been eating properly. It always disappears. Great for anyone going low carb OR who has so many zucchini, they don't know what to do!! :) We found the sauce to be very mild. I think it would be better with twice as much garlic. I boiled my zucchini slices for about 3 minutes so they were partially cooked. I wanted to make sure they were soft in the finished dish or I knew the kids wouldn't eat them. ;) The cottage cheese provides a slightly tangy note. I think we would have preferred ricotta, but that is personal taste. I use my 11x7 baking dish and got 6 pieces the size of what you see in my photos. Both of the guys ate two so it fed 4 of us, and I double the meat. Adjust the recipe accordingly for your family.
A great way to use a pound of ground beef and make a dinner that all will love. It's so easy too! If you cannot find Mexicorn by Green Giant, you can use a regular can of corn or frozen corn. To control the heat of the dish, you can choose mild, medium or hot salsa!
This Polish spinoff is adapted from the Pillsbury Best of the Bakeoff. I love spinach pierogis and anything shaped like a pizza! I use home grown frozen spinach-the amount you use is up to you. It doesn't wreck the recipe to use more or less. I also make my own crust, but I'm sure a ready made crust would work too.
I sampled a different recipe the other night, but had to substitute so many of the ingredients that I decided it wasn't really the same casserole anymore! This tastes very similar to my Recipe#176278, but without all the fuss of making a crust. (cooking time doesn't include cooking chicken or boiling pasta)
