Since I felt this lacked enough elements to chew on, I've been adding canned, sliced carrots (fast, easy & healthy!) for quite a while, and thought I'd update the recipe. Also, sometimes I add another can of beans, for the same reason. Glad so many of you have been enjoying this. There's a container in my frig right now - yum!

    My mother got this recipe at a Weight Watchers meeting about 15 years ago. I have never been able to find the recipe anywhere since. This recipe is fast, versatile, and my husband loves it. Add any frozen vegetables you like. It makes a large batch, so I always have leftovers to freeze. Please don't let the ranch scare you off, it give the stock a really nice flavor. Have fun playing with this recipe by varying the veggies, adding meats, or even grains like barley.

    The fresh basil flavors this hearty soup, but if you can't find fresh, use 1/2 teaspoon dried basil and stir it in when you add the broth. From a vegetarian cookbook of mine.

    This is easy, yummy and is only 5 points for the ENTIRE POT!!!!!!!!! There is another recipe posted for this, but this is entirely different. I'm sure there are other combinations, but I like this because you know me quantity. Not sure on the servings because I don't count them. Del Monte fresh Cut is what I use.     This comes from a great book. Cooking Like a Goddess by Cait Johnson. The "sisters" are corn, squash, and beans. This is a hearty vegetable stew that'll warm you body and soul after a crisp fall day of raking leaves. Pair with crusty bread and apple cider, mmmmm. I've served this with great success at quite a few pot-lucks.
