    A delicious meat-free take on a shepherd's pie from VegNews. We really enjoy this - nice and filling with plenty of flavor. I have successfully subbed in lentils for the veggie crumbles before - I just prepare 3/4 cup dried lentils according to package directions and proceed from there with the recipe.

    These little Venezuelan griddle cakes, known as arepas in Spanish, can be eaten at any time of the day, topped with cheese, meat, chicken, or eggs. You can top them with roast pork or a spoonful of pico de gallo as a delicious side or tempting appetizer. You use nonstick cooking spray quite a bit for this, but I like to use an olive oil spritzer. Enjoy!

    Revised September 8, 2006. Just did a test run on this and it's SOOOO good! The recipe was originally from Cooking Light, however I've 'kicked it up a notch'. Unlike traditional chile rellanos, this dish is baked like a casserole, so much easier. Great vegetarian main dish!

    Pasta and veggies, two of my favorite things. This is really quick and tasty. It says that it will serve 6 and thats true if those 6 people are happy with a one cup serving. I serve it with a big green salad, a chicken breast half for each person and crusty bread.

    You won't find red sauce in this dish, just cheesy goodness. If you feel like indulging just a bit give this a try. You can easily double this recipe and make one for today and an extra to pop in the freezer for a heat-and-eat meal someday in the future.

    I adore angel hair pasta, and such a fine pasta doesn't always need a big sauce. Serve with some kind of cheese or "cheez" if you wish, sprinkled on top. My children like it with sliced olives. There are many versions of this simple recipe, this one I adapted from www.cookingnook.com. This would probably be good for 4 as a side dish or 4 for lunch with a salad.

    Based on a recipe my BF asked me to make, we both liked this a lot! Altered to use real mashed potatoes. You can either use leftover mashed potatoes (2 cups), or replace the milk and potatoes with 2 cups milk and 2 cups dried potato flakes to save time. Has a mild but pleasing Mexican flavor that I think kids should like. I served this as a vegetarian main dish with a vegetable medley side of carrots, broccoli and red peppers.

    This is from Healthy Cooking, June 2008. Just something a little bit different from your typical enchilada. I enjoy the recipe as is, though for DH we have added chopped leftover turkey. I imagine that baby shrimp would be yummy in here as well if you wish to add meat. The magazine says you should get 8 enchiladas from this, but for me the filling was enough to make 10.
